I know that it's no where near Shrove Tuesday, but it always struck me as a boring filling when compared with what Crepes are filled with in France.

What I really mean is that the French have a wide variety of fillings, but the English just seem to stick with sugar and lemon. Boring! Why is it that they just use sugar and lemon when there are so many different ways to serve them.

Then tradition of making pancakes has something to do with using up perishable food before the "Lenten Fast" begins on "Ash Wednesday" I know when I was a kid in England my Mother used to make them on "Shrove Tuesay" My wife makes them now and we always have sugar and lemon juice on them.

It does help if Maple syrup is cheap such as it is here. Then what would you choose Blueberries and maple syrup or your other alternatives!!!? Besides a simple sugar like maple syrup is much better for you than white or any processed sugar.
