Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.




Beef Stroganoff Casserole
1lb. hamburger (or ground turkey works as well)
1 pkg. egg noodles or other noodle
1 can sliced mushrooms, drained
1/2 onion, minced
1/2 tsp. minced garlic (about 1 clove)
1 cube beef boullion
1/3 cup water
1 can cream of mushroom soup
1 1/2 tsp. Worcestershire sauce
1 cup sour cream
1 cup shredded swiss cheese

In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.


CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.


TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream

Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.


Baked Pizza Roll-Ups
1 can (8 oz.) refrigerated crescent roll dough
1/2 cup pizza or pasta sauce
1-3/4 cups (7 oz.) Sargento® Bistro™ Blends Mozzarella & Asiago with Roasted Garlic
1-1/2 tsp. Italian seasoning
2 Tbsp. Sargento® Fancy Parmesan Shredded Cheese

Separate crescent rolls into triangles. Spread thin layer of pizza sauce evenly over each triangle; top with Italian shredded cheese and Italian seasoning. Roll up each crescent triangle, starting at wide end; place on baking sheet coated with non-stick cooking spray. Sprinkle Parmesan cheese over top of each pizza roll-up. Bake in preheated 375°F oven 15 minutes or until golden brown. Substitution: Sargento® 6 Cheese Italian Shredded Cheese may be used in place of Sargento® Italian with Garlic Shredded Cheese.


"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese

Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.


Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro

Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.

EASY BEEF ENCHILADAS
1 Lb. ground beef
1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos &
Fajitas

Heat oven to 375*F. Brown ground beef over medium-high heat
until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce
and 1 cup cheese. Spoon enchilada filling onto tortillas;
roll-up and place seam-side down in lightly greased 13 x 9 x
2-inch baking dish. Pour remaining enchilada sauce over top;
sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to
20 minutes. Makes 12 Enchiladas

I use boneless skinless chicken breasts. I brown them with salt and pepper and a little garlic salt then put them in a baking dish. I cover the chicken with cream of chicken soup and bake for 1/2 hour then I make the dumpling recipe on the box of Bisquick and add that to the top of the simmering dish and bake as directed ending up with browning them. I always serve these with a green vegetable (peas or green beans or broccoli, or Brussels sprouts). It is great for a good comfort food dinner and it is so easy.

This is simple, but tastes like you spent all day at it!


Lime Chicken

4-6 pieces of chicken (I like the white planks, but have also used thighs with the bone in)
Salt
2 pkgs. Ramen Noodles
¼ cup margarine
¼ cup lime juice
Salsa
Shredded cheese
1 – 16 oz can chicken broth

Heat oil in skillet over high heat. Quickly brown the outside of the chicken, but do not cook completely. Salt chicken lightly. Prepare Raman noodles as instructed on package, and pour them into a baking dish. Heat butter and lime juice together until butter is melted, and pour over chicken. Place a small amount of salsa on each piece of chicken. Sprinkle generously with cheese. Pour 1 cup of chicken broth around chicken. Cover with foil and bake at 350 for 45 minutes to 1 hour.

I saw this recipe on 30 minute meals and it was so good! It's relatively easy, if you need to make it in a big hurry you can chop all the veggies ahead of time. I also used regular spaghetti instead of bucatini.

Worms and Eyeballs

1 1/2 pounds ground chicken breast
2 cloves garlic, chopped
2 tablespoons chopped ginger root
2 scallions, finely chopped
1 small red pepper, 1/4 finely chopped and the remainder thinly sliced
2 tablespoons hoisin sauce, Chinese style barbecue sauce
Salt and coarse black pepper
3 tablespoons vegetable oil, divided
3/4 small red bell pepper, sliced
1 cup shredded carrots
1 cup bean spouts
1 cup snow pea pods, julienne cut
1 pound bucatini, cooked to al dente
1/4 to 1/3 cup dark soy (Tamari) sauce, eyeball itPreheat oven to 400 degrees F.
Combine chicken, garlic, ginger, scallions, finely chopped red bell pepper, hoisin and salt and pepper. Roll meatballs into the size of chicken eyeballs. Place balls on a nonstick cookie sheet and coat lightly with vegetable oil, about 1 1/2 tablespoons. Roll balls around with your hands to gently coat with the oil. Roast the chicken eyeballs 10 to 12 minutes in a very hot oven.
About 5 minutes from the meatballs coming out of the oven, start stir-frying the veggies. Heat a large nonstick skillet over high heat. Add remaining 1 1/2 tablespoons vegetable oil. Add the sliced red bell pepper, carrots, spouts and pea pods to hot pan. Stir fry 1 minute, then drain noodles and add them to the vegetables. Add dark soy sauce to the noodles and toss to combine and evenly coat.
Transfer noodles to a serving platter and top with chicken eyeballs.

You can buy hoisin sauce at a WinCo, look in asian section.

SALMON PATTIES

A tin of pink salmon or buy fresh salmon and poach it (steam it) until cooked.

In a bowl, mash up the salmon, add one or two eggs, breadcrumbs or crushed crackers, half an onion that is finely diced, teriyanki or soy sauce for addtional flavor.
Mash up with a fork, add more breadcrumbs if necessary. Mixture should be moist but not too thick.

Then heat up a frying pan and add a half cup of olive oil. Make small flat patties in your hand, dip them in breadcrumbs and add to pan. When golden brown, turn over until cooked. Then place them on paper towl to remove excess oil. Takes only a few minutes and O so delicious. I promise.

Salmon with lemon, butter and garlic. Rice a Roni -Chicken Mushroom flavored rice and Salad.

Or you can substitute seasoned Red Potatoes instead of the Rice.

Use Red or White Wine and water for beverages.

Shepherd's Pie is somewhat easy to make. You can use ground beef or diced chicken.

Baked Ziti

A huge salad platter with grilled chicken breast or grilled fish. I like to make Nicoise salad, with green beans, eggs, tuna fish... You can be creative with this one.

DO SOME CULTURE THEMED DINNERS! LIKE ONE DAY IT COULD BE MEXICAN OR THE NEXT DAY IT COULD BE ITALIAN! Its a wonderful idea! You can even make the occasion more fun with dressing up like Mexicans or Italians! Do some tasty chicken,cheese,veggie enchlidas or some tasty fettucini alfredo with some gourmet grilled chicken salad!

bread a piece of chicken (flour, eggs then bread crumbs.) cook in olive oil then you can use that on a salad, dip in hot sauce, marinara, gravy, or even ranch dressing to have a great dinner.
beef stroganoff is great too, use pepper steak, saute mushrooms (or use can) + beef broth simmer for 3 minutes, add egg noodles cover with liquid cook 7minutes + sour cream.... yum

If you have access to ethnic spices, try this Puerto Rican style Beef Stew -- (very easy; just throw everything in a pot and let cook on its own)
2 lb beef for stew
6 large potatoes, cubed
1 can tomato sauce
1 onion, chopped
1 can mushrooms
2 beef bouillion cubes
1 TBS sofrito
1 1/2 TBS recaito
water
1/2 c green olives
goya adobo seasoning


Combine all ingredients in large pot. Add water to cover. Boil until
potatoes are tender (1-2 hours)
Can cook in crock pot.
Serve with tortillas and lime.

Curried Scallops-
3 TBS butter, divided
1 lb scallops
1/4 c green onion
1 TBS flour
1 TBS curry powder
1/2 tsp salt
1/2 c chicken broth
1/2 c milk
1 small tomato, chopped
Rice or Fetuccini

Melt 1 TBS butter over medium high heat. Cook scallops 2-3 min until white, stirring frequently. Remove scallops and drain skillet. In same skillet heat 2 TBS butter. Cook green onion, flour, curry powder, and salt. Stir constantly until bubbly. Remove from heat. Stir in chicken broth and milk. Heat to boiling stirring constantly. Boil and stir 1 min. Stir in tomato and scallops. Cook @ 3 min. stirring occasionally. Serve over rice or fetuccini.

Cajun Beef and Rice -
1/2 pound ground beef
1 medium stalk celery, chopped (1/2cup)
1 medium onion, chopped (1/2cup)
2 teaspoons Cajun or Creole seasoning
2 cups uncooked instant rice
1 cup water
8 medium fresh okra, sliced, or 1 cup frozen (thawed) cut okra
2 medium tomatoes, chopped (1-1/2cups)
1 small green bell pepper, chopped (1/2cup)
2 cans (11-1/2 ounces each) lightly tangy eight-vegetable juice (V-8)

Heat 12-inch nonstick skillet over medium-high heat. Cook beef, celery, onion and Cajun seasoning in skillet about 4 minutes, stirring frequently, until beef is brown and vegetables are tender. Stir in remaining ingredients. Reduce heat to medium-low. Cover and cook about 5 minutes or until rice is tender.
