What is the mechanical difference between lets say ABEC 3 and ABEC 5 bearings. What is it that makes them so much smoother?

Not a whole lot of difference if U are a recreation skater,1 ABEC is OK for kids (small) . 7 and up for racing where seconds count. That combined with good wheels suitable for floor or terran.Sidewalk and street smothness. There are wheels designed for gravel roads, and I would suggest ABEC 3 or 5 ,if you cleaned and oiled (greased) them after so many hours use or after you ran them in water. They are lower to the ground and will build up some heat then suck moisture in.Hope that helps.Roller blading is beautiful, have fun.
