Anyone know of a "show stoppin" receipe for Cornish Hens???

Yes - and its easy. Try this out in a skillet over boneless chicken breast to see if you like the flavour. I've been using it on cornish hens for years with rave reviews.
1 1/2 cups Italian salad dressing
1/2 package onion soup mix
3-4 tablespoons apricot jam
1 tablespoon soya sauce.

Heat together in a pan and pour over the hens before baking. Baste regularaly.

The reason I said to taste it out first is that you may prefer more apricot and less onion.

This was a recipe I used a few months ago which came out great. I found this on recipezaar.com

2 teaspoons salt
2 Cornish hens, thawed
1/2 cup butter, melted
1 cup white wine
1/2 teaspoon tarragon

Sprinkle Salt on each Hen.
Place Hen on a shallow baking pan.
Mix butter, wine and the tarragon in a bowl.
Pour 1/4 of the mixture over each hen.
Bake at 350 for 30 minutes.
Pour 1/2 of the remaining butter mixture over each hen and bake 25 more minutes

Although I didn't have tarragon, I substituted with fresh basil and some dill. I also added homemade stuffing inside. Just some breadcrumbs, bell pepper, herbs(thyme, rosemary, whatever you have) and seasonings.You can also add some lemon juice and put the left over lemon inside.

Look up a recipe on the inter-net for oyster stuffing. I use that all the time in Cornish hens...its delish.
