Is it sausage as for breakfast(loose to make a patty)If so just cook like any other brekfast sausage. If you have the sausage link, slice into round chunks and make with tomatoes-onions-bellpeppers-garlic-cook until gravy thickens a bit. Then pour over white rice...Enjoy.(I miss deer meat) You know that deer is a very lean meat, but it shouldn't become tough---they ground the meat up to stuff the sausage. You can add a little red pepper to this recipe to spice it up a bit..

Do not overcook, it may sound gross to many but leaving it a little pink is best, the pink will disappear as it sets, but if it's mixed with pork, cook completely. Cook just like pork sausages, fry with a little oil or use non-stick. It will cook quicker than beef or pork. Use a meat thermometer to medium beef or pork depending and enjoy. I love venison, we make breakfast sausage, mild, hot, and Italian sausages. What ever you do, let the meat rest for 10 minutes before eating or any kind of meat will be dry.

I have cooked it two ways. 1. Cook in a frying pan with a little oil, I added some onions, a little lemon juice and some garlic. 2. Grilled on outdoor grill
