Spinach and feta parcels:
Buy some filo pastry. Cut it into large squares. Mix together cooked spinach, pine nuts, feta cheese, chopped sun dried tomatoes and anything else that you think will go. Put a tablespoon in a corner of the filo squares, fold over and use dabs of milk to seal the triangles. Brush with milk, and bake for about 20-25 mins at 180c.
Sorry I can't be more accurate about the amounts - I never measure when I cook. But I'm sure you can figure it out!

Get yourself a George Foremen grill, then get an old plastic spray as used for cleaning purposes fill this will sunoil or such spray the top and bottom of the George get any type of fish put it under wait a while check if cooked right through lift onto plate have some kitchen tissue ready to wipe off and it is done, chips or baked potatos side salad,
Then there is the cold dish , a tin of tuna, chop up some celery and cucumber in to small chunks add vinegar and salad cream with pepper stir in until all mixed , again with side salad

How about lentil soup?
Cut up a few carrots, some swede or turnip, an onion, a parsnip & a couple cloves of garlic, shove them in a saucepan, add tablespoon or so of red split lentils, some black pepper, a sprinkling of coriander (the orangey spice not the green leafs), a shake of dried parsley, 2 vegetable stock cubes & a dollup of tomato ketchup. Cover with water, bring to the boil, stirring every now & then. Once boiling, turn it down to simmer & leave for about 30-40 minutes - maybe going back to stir it when you remember.
Serve it with crusty white bread rolls or thick doorstep slices of wholewheat bread.
Any left overs can be reheated next day ... just boil it for about five minutes before eating.
You can vary what you put in the soup too ... I've just made a decidedly chunky warm coloured concoction:
one onion, three cloves or garlic, three carrots, half a butternut squash & one large sweet potato - added water, lentils, dash of ground coriander, dash of paprika, ground black pepper, two chicken stock cubes (as I'm not a veggie), a sprinkling of dried parsley & a long squeezy dollup of tomato ketchup.
Hmm, tastes good, feels like a meal as the vegetables are so chunky. Didn't take long to prepare, just left it to cook itself & there is another for 4 great big bowls full.... that's tomorrow sorted too!
Btw, that's cooking - but easy style.

Here is an easy meal that I just finished. Two chopped hard boiled eggs, one cup of chopped boiled chicken livers, topped with chopped onions on a bed of lettuce. No meat involved.
It is an ethnic dish from my childhood that I enjoyed today for the first time in at least 10 years.

Try a big salad with beans, cheese, something crunchy like croutons or nuts, tomatoes, & bagged salad mix.
Also, I like spagetti noodles with store bought Thai peanut sauce, coleslaw mix from the salad aisle, and peanuts. This dish is good hot or cold.
There are many good asian frozen foods and mixes. I like to get veggie egg rolls and then make a can of soup to go with it.

Just get a very large potato bake it untill very soft, poke it to see if it is cooked, when cooked cut it and add salt and butter mash it in the skin, add what ever toping you want, cheese, tuna, toms, anything will go with this, you could always put it back in the oven or under the grill to give it a nice finish,

Try buying lots of fruits.
Get some bread you can keep in your refrigerator, and some cheese, light ham, so you can make a sandwich.
And if you like pasta, you just need do make a good tomato sauce and keep it frozen, so when you need it, you just have to boil it on the microwave.
The pasta itself, you have to get a pan, fill it with water and wait for it to boil. Then, you put the pasta inside for something like 15 minutes, get the water of, mix the pasta with the sauce and you have got yourself a nice meal.

Use 1 lg can of V8 add 1 pkg of frozen veggies and some pasta or barley, season to taste. Quick, cheap and easy soup. I use meat but I am sure it would be fine without it.

Stir-fry veges with some sweet chilli sauce. Takes 5 min to cook and you can chuck anything in it.

omelettes, stir fry, fajitas, toasties ,jacket spuds, salads are all really easy. why not have a look on a few web sites for some other ideas or go to your library and get a book out on easy cheap recipes
