I am refinishing my kitchen cabinets and find that acetone does a pretty good job of knocking the shine off, but is there another product that would work easier? I will be repaining with oil based enamel.

Frankly, I would not be using any of the chemicals to knock the gloss off. I would use a 150 grit sandpaper. It might not do it as fast, and it might cause some dust, but the things you mentioned are all highly flammable, even explosive, and none will do your hands any good, especially acetone and laquer thinner. Acetone is particularly bad as it will literally mix with anything, even water. All can cause serious brain problems if inhaled over a time

What you need is a quarter sheet sander and 150 paper, or even 200 paper. It should degloss it and scratch it better for the new paint to hold on.

Health effects
Small amounts of acetone are metabolically produced in the body, mainly from fat. In humans, fasting significantly increases its endogenous production (see ketosis). Acetone can be elevated in diabetes. Exposure to exogenous acetone can be chronic due to acetone contamination of water, food (e.g. milk), or the air (acetone is volatile). A number of acute poisoning cases have been described. Relatively speaking, acetone is not a very toxic compound; it can, however, damage the mucosa of the mouth and can irritate and damage skin. Accidental intake of large amounts of acetone may lead to unconsciousness and death.

The effects of long-term exposure to acetone are known mostly from animal studies. Kidney, liver, and nerve damage, increased birth defects, and lowered reproduction ability of males (only) occurred in animals exposed long-term. It is not known if these same effects would be exhibited in humans.

Interestingly, acetone has been shown to have anticonvulsant effects in animal models of epilepsy, in the absence of toxicity, when administered in millimolar concentrations (see: Likhodii et. al., Ann Neurol. 2003;54(2):219-226). It has been hypothesized that the high fat low carbohydrate ketogenic diet used clinically to control drug-resistant epilepsy in children works by elevating acetone in the brain

4. FIRST AID MEASURES

EYES: Flush eye with water for 15 minutes. Seek medical attention if irritation persists.

SKIN: Remove contaminated clothing. Wash with soap and water.

INGESTION: Do not induce vomiting. Seek medical attention immediately.

INHALATION: Remove to fresh air. If not breathing, give artificial respiration. If breathing is difficult, give oxygen. Get medical attention.

Mineral spirits, which will do nothing more than remove any grease tht might be on the cabinets, will have milder effects on your body and nervous system, but it will have some effects

Paint thinner can contain more than just mineral spirits (usually acetone, naphtha, and/or methylethylketone)... which is why you don't see odorless paint thinner. Those chemicals smell. Anything labeled as Mineral Spirits is JUST mineral spirits and nothing else.

Laquor thinner will do nearly the same as acitone. what you really need to do is just use fine sand paper. Its a lot less toxic to breath
