Yes, you should freeze them before you deep fry them. That prevents the cheese from oozing out while they are in the oil. If you're going to try other cheeses you should try to find one with similar consistancy.

you need a low moisture mozzarella and after you bread them you should freeze them for at least two hours. That keeps the cheese from ozzing all over the place when you start frying them.

youre supoosed to freeze them for a few hours before you fry them...if you just fry them right away after coating them...the cheese will ooze out of the coating and into your hot oil...and youll have a nasty mess...
...I believe you can use other cheese...but make sure they arent too soft (cheeses come soft, semi-soft,hard, etc)

We never froze ours before frying, didn't seem to be a problem. We like to
use a sharp cheddar it gives a very nice flavor when used w/italian bread crumbs.
