Hi all!

I've made numerous meatloafs from various recipes. I haven't been real happy with any of them. My boys don't like chunks of onion or pepper so I have to use spices mainly, but does anyone have a REALLY good meatloaf recipe? Preferably with cheese...

I agree with your boys. I have never been a fan of meatloaf until I had this. It calls for onion but if you dice it finely you will never know it is in there and this is sooooooooo good!
1 1/2 lbs lean ground beef
1/2 can evaporated milk
1/2 cup oatmeal
1/2 cup cracker crumbs
1/4 finely chopped onion
1 egg
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon garlic powder
1 teaspoon chili powder
Mix together and form into a loaf in a pan large enough to pour sauce over.
Sauce
1 cup ketchup
1/4 teaspoon liquid smoke ( I use a tablespoon bbq sauce)
1/2 cup brown sugar
1/4 cup finely chopped onion
1 teaspoon garlic powder
Mix together and pour over meatloaf. Cover tightly with foil and bake at 350* for 1 hour or longer. Temp at 160* at least. I usualy cook close to 1 1/2 hours.

I made this last week, from kraftfoods.com--if you sign up on the website they will send you free cooking magazines with great recipes! This recipe is just one of many they have there for meatloaf ,but so far this is our favorite!

2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided



PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour or until cooked through (160ºF).

Pizza meatloaf:

2 pounds ground chuck
1/2 teaspoon garlic powder or salt or 2 chopped cloves garlic
1 envelope Liptons onion soup (trust me they will love this)
1 teaspoon oregano
1 teaspoon basil
2/3 cup Parmesan cheese (you can use the kind that is dried in the shaker can)
a few fennel seeds if you have them
Salt & Pepper
2 eggs
3/4 cup bread crumbs or cracker crumbs soaked in 2 eggs and half a cup of milk or water or stock.
1/2 cup tomatoe sauce or ready made spaghetti sauce.

Mix with hands put in a loaf pan or form a loaf on a baking sheet. Use foil to catch the drippings.

Cook on low heat about 300 degrees for about an hour and 15 minutes or cook at 325 for about an hour.

At the end of the cooking about 10 minutes before removing the meatloaf from the oven cover it in 1/2 cup tomato sauce or spaghetti sauce.

This is so good cold too and makes fantastic sandwiches.

1/2 cup +/- shredded cheese
2 lbs lean ground beef
1 1/4 cup Italian flavored bread crumbs
3/4 cup BBQ sauce
2 eggs
1 envelope Lipton onion soup mix (I use Garlic and Herb flavor)

Preheat oven to 350*, 325 for glass dish. Mix MOST of the cheese in with all of the ingredients. Mix well. In a shallow baking dish, shape into loaf. Bake 1 hour. Remove from oven; sprinkle remaining cheese on top. Return to oven. Bake 5 more minutes or until cheese is melted. Refrigerate leftovers.

My husband will only eat this meatloaf, hope you enjoy!
1 1/2 lb ground beef
1 egg
1 sm onion, chopped
1/2 cups breadcrumbs
1/4 cup lemon juice
1 cup shredded cheddar cheese
salt/ pepper
6 strips uncooked bacon

preheat oven to 350
incorporate all ingredients except bacon
shape into 6 mini loaves and place on rack in baking pan
cut each slice of bacon in half and crisscross over each loaf, tucking ends under bottom of loaf.
bake for 50 min
shape into 6 m

I Hate onions as well, so I always leave that ingredient out. I recently tried a meatloaf recipe that was really tasty. I made it like you normally would (meat, egg, breadcrumbs, spices) but I added 1/4 cup of Original BBQ Sauce. After molding it, instead of using a tomato sauce or ketchup for the top, I used another 1/4 cup of BBQ Sauce. It was great with mashed potatoes!

The very best recipe is on the box of Lipton Onion/Mushroom Soup using raw oatmeal instead of bread crumbs. If you want cheese stuff the center with cheese before baking. I like it a little more well done. Oh yes, I also draw a "happy face", heart, or flower on top with catsup.

I work as a chef in a kid's Crisis Center and when I make my Mexican Meatloaf...they gobble it up!!

2 lbs. of ground beef
2 eggs
2 cups of finely ground bread crumbs
salt and pepper
1 small jar of salsa ( I use mild)
2 cups of shredded pepper jack cheese

Mix together well...put into loaf pans and bake for 45 mintes to 1 hour, or till meat is no longer pink!!

Spicy Meatloaf

1 lbs. Ground beef or turkey
1 egg
1 cup instant oatmeal
2 Tbls. Worcestershire sauce
2 Tbls. Cajun seasoning
2 Tbls. Parmesan cheese
1-2 Tbls. Ketchup

Mix well - shape in lightly greased loaf pan - bake at 350 for 1 hour.

well I have pureed the peppers and onion and add a little whisterier sauce with some mustard and ketchup bread crumbs with minced garlic it will come out terrific
