I use butter flavored crisco. Real butter burns easily.
Melt a small amount of crisco in skillet. Wash and core two or three apples. I use yellow or green apples. Or a Johnathon apple would be a good choice. Slice and fry like potatoes until almost tender. If they get too dry add a bit of water. When tender add some butter and brown sugar. Sprinkle with cinnamon and stir well. Enjoy!

All Recipes has a portion adjustment feature and here is the recipe:
Fried Apples
makes 2 servings
INGREDIENTS
2-1/2 apples - peeled, cored and sliced
2 tablespoons vegetable oil
2 tablespoons maple flavored syrup
1/2 pinch salt
DIRECTIONS
Melt oil or butter in a medium-sized cast iron pan over medium heat. Lay the apple slices in the oil or butter. Cook slowly, turning slices as they start to break down.
When they are soft on both sides, season with a pinch of salt and the syrup.

Get nice tart apples: Granny Smith green apples are good. Peel and core the apples (probably 2 or 3 apples are enough) and slice. In a frying pan put half a stick of butter and melt on high heat. Add the apple slices to the pan and stir around to coat with the butter and brown; then add about 1/2 cup of white sugar, 1/4 cup brown sugar, a pinch of salt, and a tablespoon of cinnamon mix aroun. Add about a half cup of apple juice, water, or orange juice, cover the can and simmer on low for about 20 minutes. Taste for spices and tenderness.
You can also add 2 tablespoong of Maple sugar or syrup.
You can add apple pie spice instead of cinnamon. You can also add nutmeg, cloves, allspice, etc. to your taste small pinches of these.
You can even add a tablespoon or two of brandy for a nice punch or a teaspoon of good vanilla at the end of the cooking.
Use the leftovers on ice cream or pancakes

Use desert apples, cut into slices and remove the core. Pat them dry on kitchen paper. Fry in butter on both sides. Whether you are using them for sweet or savoury, as an accompaniment to pork, they are delicious with cinnamon sprinkled on the slices.
Don't try to use Bramleys, they collapse and you lose the nice slice shape.

Take one apple and slice it in half, fry it, and two people eat it.
