Found some great ones at the local grocer courtesy of Sunset magazine, I will be trying these 2:
Romaine Salad with Pecans and grapefruit
12oz Romain lettuce leaves rinsed and chopped into 1/2 inch pieces
1 cup fresh ruby red grapefruit segments
1 cup glazed pecans
Dress with 1/3 cup vegetable oil that has been whisked together with 1/3 cup rice vinegar
sprinkle servings with kosher salt to taste
Cranberry Ginger sauce
12oz fresh or frozen cranberries
2 (approx 8oz) seedless clementines or tangerines rinsed and quartered
3 tablespoons coarsely chopped and peeled fresh ginger
6 tablespoons lime juice
1/2 cup clover honey
In a food processor or blender combine cranberries, tangerine (include peel) ginger, lime juice and honey until finely chopped and completely combined. Spoon into serving bowl or cover and refrigerate until ready to serve.

Try my recipe for a kicked up version of the old fashioned pumpkin pie.
This has been in my family for ages now.
INGREDIENTS:
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 Tbsp. milk
1 Tbsp. sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
1 cup milk
1 can (15 oz.) pumpkin
2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
MIX cream cheese, 1 Tbsp. milk and the sugar in large bowl with wire whisk until well blended. Gently stir in half of the whipped topping. Spread onto bottom of crust.
POUR 1 cup milk into large bowl. Add pumpkin, dry pudding mixes and spices. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Spread over cream cheese layer.
REFRIGERATE 4 hours or until set. Top with remaining whipped topping just before serving. Store leftover pie in refrigerator.

Baked Acorn Squash- you can serve as many as you like & it's simple! 1. Cut squash in half (Horizonal NOT vertical) & trim ends so they are flat. 2. Scoop out seeds (like a pumpkin) 3. Fill with brown sugar, butter, cinnamon, all spice, & ground gloves to taste. (Myself and family like a lot of seasoning) 4. Bake in a covered dish at 350 degrees until tender (about 45min to 1hr.) They have a nutty taste that is set off well with the butter & Br. Suger. I hope you enjoy it as much as we do!!
