The thumb and index finger actually make a cross +, and therefore we show our love of the cross by kissing it!! The other three fingers represent the holy trinity, The Father, The Son, and The Holy Spirit!

Cause it's a holy gesture. During the gesture their hands represent the cross, and they kiss the cross to remember the crucifixion. It's part of the custom, and it's holy.

Yes, it's a sign of respect. Catholics are big on ceremonial kissing. Other Catholics will sometimes kiss the Papal Ring out of respect, and there is one point during the Mass where the priest kisses the altar.
