Marmite is a trade name for yeast extract. It is salty, with a savoury flavour. English people often spread it on toast. Some put it in sandwiches with cheese. It is very dark brown and we use it as you might use peanut butter. It tastes slightly meaty, but is vegetarian.

Spotted dick is a boiled suet pudding with raisins mixed in to the dough to make it "spotty". These puddings were very popular from the beginning of the nineteenth century to the mid twentieth century. They are now considered to be rather heavy and fattening.

You need chopped suet plus twice the weight of suet in flour and sugar to taste (not too much, as the raisins are sweet). Suet is the fat found round the kidneys of cattle (beef). Add as many raisins as you like before finishing the pastry. You need a little water to mix the pastry to a single lump. Put the lump of pastry into a greased pudding bowl. Tie greased Aluminium foil on top of the basin, with a fold in the foil, so it can expand, as the pudding does. Stand the bowl on an up turned saucer in a saucepan of boiling water, coming abou 3/4 way up the sides of the bowl. Boil for 2-3 hours. It is wonderful served on a cold winter's day with hot custard poured over

toad in the hole is a yorkshire pudding mixture baked in the oven with sausages in it. This mixture has a similar texture to the kind of batter you dip thibngs in before frying them. The batter for toad in the hole is made of flour, beaten eggs and water to give a consistancy of thick cream.

Put the sausages in a tin about 2 inches deep. bake them in the oven til cooked through, but still rather pale. Pour the batter round them and return to a hot oven. The toad is done, when the batter has risen and formed a nice golden colour.

Bubble and squeak is left over potatoes mashed and leftover cabbage chopped and mixed together. Form the mixture into "cakes" (hamburger shaped patties). Fry on both sides til nicely golden. It's a little bit like Irish colcannon.

Most of these foods are really delicious if you make them with top quality ingredients.

Good luck with trying Ask if you need more details - If you tell me your address, I'll send you a jar of marmite.

Marmite is a British savoury spread made from yeast extract, a by-product of beer brewing. It is a sticky, dark brown paste with a distinctive, powerful taste that polarises consumer opinion and prompts its advertising slogan that you either "love it or hate it". It is similar to Australia's Vegemite and Switzerland's Cenovis, and is suitable for vegetarians and vegans.

Spotted Dick is a steamed suet pudding containing dried fruit, usually currants. The dessert is especially popular in the United Kingdom, usually served either with custard or with butter and brown sugar. Spotted refers to the currants (which resemble spots), and Dick may be a corruption of the word dough. It is also known as Spotted Dog, Plum Bolster, and Spotted Richard.

Toad in the hole is a traditional British dish. It consists of sausages in Yorkshire pudding mix, usually served with vegetables and gravy.

Strong regional dialect has resulted in the dish being locally called "Tow'd in't th'ow" in some areas, that have accents similar to the Cockney accent. Badly made toad in the hole is sometimes described as "frog in a bog". Once known as Frog-i'-th'-'ole pudding in Lancashire.

Bubble and squeak (sometimes just called bubble) is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The chief ingredients are potato and cabbage, but carrots, peas, brussels sprouts, and other vegetables can be added. It is traditionally served with cold meat from the Sunday roast, and pickles. Traditionally the meat was added to the bubble and squeak itself, although nowadays the vegetarian version is more common. The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potato until the mixture is well-cooked and brown on the sides. The name is a description of the action and sound made during the cooking process.
