Make your rice ahead of time. The day before is best. It needs to be cooked but cold to make fried rice. This recipe is good. You can also use cubed cooked pork, cooked shrimp, or cubed chicken.
Fried Rice with Ham
Serves 4
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped
4 cups cold cooked rice
¼ tsp. sesame oil
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt and sesame oil, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

First, you need to boil some rice, use Uncle Ben for a real fluffy result. Otherwise any long grain rice will do.
Spread the cooked rice on to a flat plate and chill uncovered in the fridge over night or at least 2 hours. Use a large wok or the biggest frying pan possible. Start with heating peanut oil or vegetable oil over med-high heat. (Olive oil is not as suitable due to the high heat)
Add rice and fry until the grains are seperated and golden brown (stiring continuously). Add eggs, green onions, diced BBQ pork and any other dry ingredients you fancy. Fry until all ingredients are cooked through. Add salt to taste. Enjoy !

Here's how I do it.
2 cups water
1 Tbsp soy sauce
1/2 tsp parsley
1 cup Jasmine rice
5 strips bacon, minced or chopped
4 eggs
1 Tbsp milk
1/2 cup frozen peas (or peas and carrots)
Sprinkle of sesame seeds
Combine water, soy sauce, and parsley in a saucepan and heat to a rapid boil. Add rice, cover and turn heat low and simmer 20 minutes, stirring rice occasionally. When rice is cooked, put rice in the refrigerator while taking the next step.
In a large frying pan, cook bacon over medium heat. Remove extra bacon grease except for about 3 Tbsp.
Combine eggs and milk in a small bowl. Mix well. Just before the bacon is crispy, add the eggs to them. Stir immediately to break the eggs up in little chunks.
When the eggs have solidified, add the rice and mix it well with the egg/bacon. When the rice is heated, add the peas and stir until the peas are heated through.
Move rice to a serving dish and sprinkle the top lightly with sesame seeds.
For non-meat eaters, in lieu of bacon, just heat three Tbsp. olive oil with a few drops of sesame oil for flavoring. I've had raves from vegetarian friends when I did it this way.

i think stirfry rice turns out great if you boil the rice in chicken broth instead of water. when u go to fry it, make sure its rinsed and cold. refridgerating first helps it not stick. i like to use oil (peanut oil would be great) and some seseme oil for sure. add green onions or regular onions, celery, peas ( i like to add frozen mixed veggies), alittle ginger, garlic salt or powder, pepper and soy sauce (not too much soy sauce, u can always add more later). i make scrambled eggs and add when the rice and veggies are almost done. yum. good luck :)

I consistently use brown rice with stir-frys. I frequently sauté the rice in slightly olive oil or butter first for a minute or 2, then upload the liquid. carry to a boil, cover and shrink warmth, and simmer for extra or less 40 minutes. i take advantage of a million cup of rice, a million cup of vegetable or rooster broth, a million cup of water, and a sprint of salt.

to authenticly stir fry rice: boil rice, get a wok, use peanut oil as it gets hot quicker add onions,egg or whatever rice you want then add the rice turn up heat and cook for about 5 to 10 mins add a little soy sauce
