I notice these sorts of somewhat silly questions tend to get a decent number of good answers.

Ideally, vegetarian comfort food. Any ideas?

Heat some olive oil in a pan with some red pepper flakes and fresh chopped garlic and once starts cooking, add the noodles (I would warm the noodles first) and then add steamed brocoli and some parmesan!! Yum!!
I usually use regular spaghetti for this but this would work and you could add any veggie that sounds good to you, tomatoes, mushrooms, etc...

Noodle Kugel


Prep Time: 15 min
Total Time: 1 hr 15 min

1 container (16 oz.) Low Fat Cottage Cheese

1 container (16 oz.) Sour Cream

1 cup sugar

5 eggs, beaten

1/2 cup (1 stick) margarine, melted

1 Tbsp. imitation vanilla

1 pkg. (12 oz.) broad egg noodles, cooked, rinsed and drained

1 Tbsp. cinnamon sugar

PREHEAT oven to 350°F. Mix all ingredients except noodles and cinnamon sugar until well blended. Stir in noodles.

SPOON into 13x9-inch baking dish; sprinkle with cinnamon sugar.

BAKE 50 minutes to 1 hour or until center is set. Cool at least 10 minutes before cutting to serve.

My mom made these awesome egg noodles awhile back and I will try remember what she did:

First, she boiled up the noodles. While that was happening, she was sauteing onions in butter, salt and pepper with a little bit of hot sauce (not much, just enough for flavor). After the noodles are done cooking, she sauted the noodles until they were a little bit crispy. It was delish! :)

i am not sure if this is okay for a vegetarian or not but i love my egg noodles with cream of chicken mixed in.....i guess you could use cream of mushroom but my family won't eat that!!! all you do is cook the noodles like usual, drain out the water, and mix in a can of cream of whatever. You won't believe how easy and good it is!!!!

one can of either cream of chicken or cream of mushroom soup along with one can of milk combine it with the egg noodles. sprinkle grated cheese on it. let it set till soup is absorbed in noodles. makes a great side dish. if you have any left over chicken or turkey throw it in with it for a main meal.

fry some onions and corned beef with some sweetcorn then add the egg noodles, trust me its delicious! a friend of mine who came from the carribean showed it me.
