I make what I call a great "Cheater Chili". Use ground beef, brown well, add Old El Paso chili seasoning (follow directions on pack) and Tostino's Salsa (Hot, Medium, Mild, you choose). You can add beans is you like them. Top with cheddar cheese, sour cream and tortilla's or corn chips. I've made this for large crowds when there were others who brought chili's as well, some took a considerable amount of time to make. Everyone raves about my chili, (well, not mine exactly). Try it, you'll like it! You can also use ground turkey or chicken for lighter fair or use chicken breast.

First, prepare all the ingredients:
1 lb of ground meat (whichever meat you prefer). If frozen, defrost.
Mince 2-5 cloves of garlic (depending on how much garlic you like). Set aside.
Measure out 1 or 2 tbsp of chili powder (depending on how spicy you like things).
Chop 1 onion. Set aside.
Chop a green bell pepper (if you don't have one, you can just use some frozen veggies).
Do you have a jalapeno pepper? If so, remove seeds and chop it in tiny pieces. If not, see if you have some canned chilies, and measure out 2 tbsp. If you don't have canned chilies, just use 1 tsp red pepper flakes. (If you aren't used to spicy foods, you can use just half of jalapeno).
Open a 14 oz can of chopped tomatoes.
Open a 14 oz can of beans (black or kidney). Drain and wash the beans in a colander - usually the liquid they are in is kind of yucky, so we want to get rid of it!
Now once all the ingredients are prepared, the rest is really quick and easy.
Heat the large frying plan over medium-high heat. Add the meat, and cook, stirring, for 5 minutes, or until brown. Remove the meat from frying plan. If there is any fat in a pan, pour it out.
Add 1 tbsp of oil to this frying pan and heat for 30 seconds. Add minced garlic and chili powder. Stir for 30 seconds.
Add the onion and jalapeno. Cook, stirring, for 4 minutes.
Add bell pepper and stir. Cook, stirring, for 2 minutes.
Add the browned meat, tomatoes and beans to the pan. Mix everything thoroughly. Cook for 3 minutes.
Taste it and adjust the seasonings. You might need to add some salt (some brands of chili powder have more salt than others). You can also add more chili powder.
Serve piping hot. Great over rice!
