Beef Stew
fixins:
stew beef
v8
a little wine
herbs
fresh parsley
flour (1/4-1/2C) mixed w/ S&P, & lot o' garlic powder (put this mixture into a bag)
Veg- mushrooms carrot onion celery potato squash tomatoes- whatever you have on hand- just remember to cook the hardest veg for the longest time.
oil
to proceed:
Cut beef into the size that you desire- and shake in a bag w/the flour and spices until coated. Brown in oil. Once brown add water and v8 to cover (I use about 1/2 & 1/2)- I like a lot of broth and so I add quite a bit- I also like to add an onion and a few cloves of garlic during this stage. Simmer, stirring occasionally for a while- until the meat is done- about half an hour or 45 minutes- longer if you have the time. Replenish liquid as needed. When you are about an hour away from dinner add your hard veg & shrooms -carrots and potatoes, squash-sweet potatoes. Simmer gently. Taste test. Does it need salt or anything? Add soft veg about 30 minutes before dinnertime. During the last few minutes of cooking add a coupla glugs of wine or sherry and dried herbs- I like thyme and dill and a big handful of chopped parsley.
If desired, serve with a spoonful of sour cream on top of your bowl and make popovers to go with the meal they are a nice touch and are super easy...

Beef, Guinness and Mushroom Stew
Servings: 6
Level of difficulty: Easy
Preparation Time: 15 minutes
Cooking Time: 3 hours 30 minutes
Ingredients
900g shin of beef, trimmed and cut into 2.5cm cubes
seasoned plain flour, for dusting
50g Butter
2 tbsp sunflower oil
2 Onions, roughly chopped
100g button mushrooms
300ml Guinness
2 tbsp tomato purée
1 tbsp Sugar
1 bouquet garni, (1 bay leaf, 2 sprigs of thyme, 2 sprigs of parsley, 1 sprig of rosemary, tied together with a string)
salt and fresh ground black pepper
225g shitake mushrooms
Method
1. Pre-heat the oven to 170C.
2. Toss the beef lightly in seasoned flour.
3. Heat a third of the butter and 1 tablespoon of the oil in a frying pan and brown the meat briskly in batches, without overcrowding the pan. Transfer the browned beef to a casserole.
4. Add a little more butter and oil to the pan and fry the onions until lightly browned. Scoop into the casserole. Finally fry the button mushrooms and add those to the casserole too.
5. Pour the Guinness into the frying pan and bring to the boil, scraping in the brown residues from frying. Stir in the tomato puree and sugar.
6. Pour the Guinness mixture into the casserole, add enough hot water to come about 3/4 of the way up the meat and add the bouquet garni, salt and freshly ground pepper.
7. Cover and transfer to the oven. Cook for 2-3 hours or until the meat is very tender. Check occasionally, giving it a stir, and if necessary add a little more hot water.
8. Remove the stalks from the shitake mushrooms and discard. Slice the caps thickly. Heat the remaining butter in a frying pan and sauté the mushrooms, then stir into the casserole and return to the oven for 5 minutes.
9. Discard the bouquet garni, adjust the seasoning and serve.

Easy Oven Beef Stew
"Too busy to cook? Well, just put these four ingredients in the oven and forget about it. I like to use London broil. Great served over noodles! Try adding your favorite vegetables."
Original recipe yield: 6 to 8 servings
INGREDIENTS
3 pounds chuck roast
1 packet dry onion soup mix
1 (12 fluid ounce) can or bottle ginger ale
1 (8 ounce) can mushrooms, drained
DIRECTIONS
Preheat oven to 200 degrees F (95 degrees C).
Cut the roast into cubes, then place in a 10x15 inch roasting pan with soup mix, ginger ale and mushrooms; mix well.
Bake in preheated oven for 4 hours.

the easiest way i have found to make beef stew is to buy meat (chuck will do...just trim) and put into a slow cooker if u have it. peel potatoes and carrots, add celery, 2 cans of campbells french onion soup OR 2 envelopes lipton onion soup. add pepper and garlic salt or garlic powder. put lid on and cook on high in slow cooker for 4-6 hrs or med for 6-8 hrs. comes out tender and yummy. oh, i would use more than a pound of beef, 6-8 potatoes and about 6-8 carrots, probably 3-4 stalks of celery. just sprinkle pepper in as u would like it and garlic salt or garlic powder sprinkle alot in (i love garlic)

INGREDIENTS
2 pounds cubed beef stew meat
1/2 cup all-purpose flour
3 tablespoons margarine
1 onion, chopped
4 carrots, sliced
3 stalks celery, sliced
1 clove garlic, minced
2 bay leaves
1 teaspoon salt
1 teaspoon white sugar
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/8 teaspoon ground cloves
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
4 cups water
DIRECTIONS
Dredge beef cubes in flour until evenly coated.
Melt butter in saute pan and saute coated beef cubes until evenly brown.
Transfer beef to slow cooker and add onions, carrots, celery, garlic, bay leaves, salt, sugar, pepper, paprika, cloves, lemon juice and Worcestershire sauce. Pour in water and stir.
Cover and cook on Low 10 to 12 hours or on High 5 to 6 hours. Serve hot!!

THIS IS MY OWN RECIPE, I USE A BEEF JOINT CUT UP BUT YOU CAN USE ANY BEEF YOU LIKE, YOU WILL NEED,
1 LARGE CHOPPED ONION
2 OR 3 CLOVES OF GARLIC
1 TEASPOON OF MIXED DRIED HERBS
2 FLUID OZ'S OF RED WINE.
WHATEVER VEG YOU LIKE. AND GOOD PINCH OF PEPPER
FRY ONIONS TILL SOFT, ADD MEAT AND BROWN, ADD GARLIC AND MIXED HERBS STIR WELL, ADD WINE, YOU DONT HAVE TO PUT THIS IN BUT IT GIVES IT A LOVELY FLAVOUR, PUT SOME WATER IN JUST TO COVER THE MEAT, AND COOK FOR A COUPLE OF HOURS, I DO MINE IN THE OVEN. WHEN ITS COOKED, POUR IN SOME GRAVY GRANULES,TO THICKEN, THATS IT, IT ALSO WORKS VERY WELL WITH LAMB.
