If you like chicken, my favorite (and simple) recipe is as follows:
Motza-mato Chicken
(motzarella and tomato chicken)
Makes 4 servings
-Defrost 4 chicken breasts (bonless & skinless, or whatever you prefer)
-Put them in a skillet w/about an inch of water to cook the chicken (takes 20-25 minutes) on medium heat. Turn the chicken half way through cooking. Salt & pepper the chicken.
-Once done cooking, turn the heat down to low (or simmer), drain the water from the skillet, and add a can of diced tomatoes to the skillet with the chicken in it. Put back on the stovetop and let simmer for 2 or 3 minutes
-Then add sliced or shredded motzarella cheese on top of the peices of chicken. Let the cheese melt (only takes a couple minutes) and youre done!
-Serve and enjoy.

BROCCOLI AND PINE NUT SOUP
30g butter
1 onion, finely chopped
6 cups chicken stock
750g fresh broccoli
1/3 cup pine nuts
extra pine nuts to serve
Melt the butter in a large pan and cook the onion over moderate heat until soft but not browned.
Add the stock and bring to the boil
Remove the florets from the broccoli and set aside.
Chop the broccoli stalks and add to the pan.
Reduce the heat, cover and simmer for 15 minutes
Add the florets and simmer, uncovered, for 10 minutes, or until the florets are tender.
Allow to cool completely.
Add the pine nuts and blend until smooth in a food processor.
Season to taste with salt and pepper, then re-heat gently.
Sprinkle with extra pine nuts to serve.
Delicious with toasted foccacia, drizzled with extra virgin olive oil!

Shopping list-
get a pork roast, Mandarin oranges, green onions, mushrooms, a handful of new potatoes and two handfuls of fresh green beans ( i prefer spinach)-(per person), a package of precooked bacon and chopped garlic. Get some spices like Ginger, cinnamon, rosemary
Meat-
Get a large saute pan, Score the meat, and then Brown the pork roast on all sides, then take it off and set it aside-let it cool down, rub down with spices (ginger & cinnamon) and stuff with some rosemary & garlic, pour over the oranges with the juice. (baste it every twenty minutes or so) watch it under the broiler and for 3-5 minutes at the end-[after spices soon put it in the oven at 350 for 30-40] slower is better.
Clean and boil the new potatoes, then remove them and chop in quarters, sprinkle with bacon bits and Molly Mc Butter. { or you can just drop all the new boiled pototes, some milk, butter, garlic and bacon in the mixer and blend them into the mashed pototoes)
Twenty minute Before dinner-
Keep the saute pan with the meat browniing on it, rubber scrapper and a touch of warm water and add some chopped onions, mushrooms, teaspoon of pre cooked bacon and "dash" of cajun spices and then add green beans or (spinach) to cook till tender.

Try chicken breast chunks, with squarly-cut red onions, rosetta potatoes and spinach grilled in the oven. Tarnish with basil, salt and mixed spices to taste. Enjoy.
