Is this a religous belief issue? You can use a sparkling type of wine-non-alcoholic. You can get unfermented wine from homebrew stores-It will be very sweet as the yeast eats the sugar to make alcohol. If you have wine and wish to de-alcohol it. Simply-pour it in a large bowl and freeze it. Then scrape it out of the bowl and put small amounts in a paper towel lined salad spinner and spin it. The alcohol will not freeze well and fall through. Cooking alcohol actually reduces the alcohol content greatly. It would take a lot of cooking alcohol to create any ill effect on you. Brandy or Sherry will burn easily-use caution and take a lighter to it to burn the alcohol out.

All grocery stores carry non-alcoholic wines for cooking. They are usually in the isle with the ketchup and other type sauces etc. They give the flavor of the wines or sherry but no alcohol in them.

You can use grape juice with a splash of vinegar. But you know when you cook with wine, the alcohol will evaporate and there is nothing left but the juice. I don't see the point of not using it. Godloveya.

To substitute white wine in a recipe, use apple juice. I did it last night with a chicken in wine recipe and was great! I'm not sure what to substitute for red wine though.

Try making this recipe:
the grape juice is mixed with sugar.
Apple cedar vinegar is added to it!
Mix this composition with a bit of lemon juice and Voilla~!
:) Cool and fast :)
