Try this pasta and sauce;
2 cans of cheap plum tomatoes, chopped
2 cloves of garlic, finely diced
1 large onion, finely diced
salt and pepper to season
tomatoe puree, 2tbsp
mixed italian herbs(a generous sprinkling)
pasta of whatever description takes your fancy
throw all ingredients barr the pasta into a good size saucepan and simmer on a low heat for anywhere from half hour to an hour in order to reduce sauce down slowly and ensure good flavour.
cook the pasta according to insructions on packet until just softening then drain.
add the pasta to the simmering sauce and mix thoroughly, cook for 10 mins or until pasta softened to your liking.
Yummy and fat free.
You can add any kind of minced meat to this by gently browning it off first, draining any fat and then following from 'throw all ingredients' (adding them to the mince obviously).
or
Spicy Alternative Spuds.
potatoes, peeled and chopped as if to roast
two cans plum tomatoes, chopped
basil, sprinkling
curry or chili powder (to your taste)
1 lge onion, finely diced
salt and pepper to season
part boil the spuds for approx 15 mins and then drain.
whilst spuds boil put other ingredients into a large pot and simmer gently.
add spuds to the large pot with other ingredients, continue to simmer or alternatively put in slow oven for half hour or so(in appropriate pot of course).
serve with whatever you like-grilled chicken breast is good with this.
Tray baked veg.
butternut squash chopped into large chunks
turnip,peeled and chopped, large chunks
potatoes, peeled and chopped,medium chunks
carrots, peeled and chopped into sticks
red onion, roughly chopped
garlic, 2 cloves, chopped finely
1 can mixed pulses(drained and rinsed)
salt and pepper to season
2 tbsp olive oil
cumin 2 tsp (optional)
get a large, deep, non stick baking tray and put all vegetables into it. sprinkle 2tbsp of olive oil over veg and season generously with salt and pepper. sprinkle 2 tsp of cumin if desired. mix the whole lot thoroughly with your hands, ensuring oil well spread about.
seal off top of baking tray with tin foil and put in middle of oven gas mark 5 for about an hour.
open with care, veg should be done to perfection-moist and pretty much fat free.
use whatever root veg you like these are only examples (and it re-heats well too)
hope these help. happy cooking!
