I am gonna make chicken noodle soup. Easy peasy:

Cooked chicken left over from last night, shredded up.

Cook some noodles in stock

stir fry some onions, peppers, bean sprouts, mushrooms and ginger and chili

put noodles in a bowl with veggies and chicken, pout over the stock and you're all done.

Kielbasi & sauerkraut w/ peorgies.
Servings for two:
I lb of fresh kielbasi
1 bag of can of sauerkraut
1 bottle r can unsweetened apple juice
Put kielbas, saukerkraut in a baking pan .
Pour enough apple juice over it covering 1/2 way up the pan.Cover with foil. 20 minutes before done take the foil off.
Bake in oven on 350 for 1 hour. DONE
Buy a box of Mrs. T's peorgies any flavor( fry or boil them)
a vegetable on side along with some mustard and a little bit horseradish in the mustard to put on the kielbasi dinner.

SUN DRIED TOMATO AND SALAMI PIZZA

1 green capsicum (green pepper)
1 red or yellow capsicum (red or yelllow pepper)
1 cup grated cheddar cheese
100g salami sliced
1 red onion, thinly sliced into rings
1/2 cup black olives, pitted and sliced
150g bocconcini

7g sachet dried yeast
1/2 teaspoon salt
1/2 teaspoon sugar
2 1/2 cups plain flour
1 cup sun-dried tomatoes, finely chopped
1/2 cup pine nuts, finely chopped

Cut the capsicums into large flat pieces, remove the membrane and seeds.
Place skin side up, under hot grill and cook until skin blackens and blisters.
Cool under a tea towel.
Peel away the skin and cut the flesh into thin strips.
Set aside
Mix the yeast, salt, sugar and 1 cup warm water in a small bowl.
Cover with plastic wrap and leave in warm place for 10 minutes, until foamy.
Sift the flour into the bowl, make a well in the centre and add the yeast mixture, sun-dried tomatoes adn pine nuts.
Mix to a dough.
Pre-heat the oven to moderately hot.
Knead the dough on a lightly floured surface for about 10 minutes, or unit smooth and elastic.
Roll out to a 35cm round.
Plance on a 30cm non-stick pizza tray, folding the edge over to form a rim.
Sprinkle the pizza base with grated cheese.
Top with salami, red onion, olives and roasted capsicum.
Bake for 30-40 minutes or until the base is cooked.
Top with thinly sliced bocconcini and bake for a further 5 minutes, or until just melted.
(Bocconcini can be replaced with mozzarella)

Make Chicken Fajitas

Saute' your chicken in olive oil with:

green pepper
yellow pepper
red pepper
onion (use a sweet one like a vidella)
garlic (optional, I have to have it)
black beans (drained and rinsed)
pinto beans (drained and rinsed)
mexican corn (drained)

spanish/mexican rice (cooked, keep separate)

Get some large flour tortillas, place a few of them in a large zip lock bag and heat for 1 minute in the microwave...they will steam and soften. Take a warmed tortilla and place some of the filling in middle and fold or roll. It is delish. You can put the rice on it if you'd like or eat it as a side. Guacamole is optional, as well as sour cream shredded cheese and salsa.

Chicken & Dumplings
serves 6

1 (3 lbs) chicken, cut into parts (or use 3 lbs mixed chicken pieces, i.e. thighs legs etc.)
1 cup all purpose flour, seasoned with salt & pepper
2 Tbls. butter
1 Tbls. vegetable oil
4 Leeks (wash thoroughly and sliced thinly crosswise)
4 Shallots (sliced thin) or 1 small onion (sliced thin)
4 Carrots, peeled, halved lengthwise, and sliced
2 Celery ribs with leaves, sliced
1 small Bay leaf
1/2 tsp. dried thyme
3 cups chicken broth
1/2 cup apple cider or juice (you can use extra broth in place of apple)

For Dumplings:
1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 Tbls. baking powder
1/2 tsp.salt
2 Tbls.dill (minced if fresh)
1 cup plus 3 Tbls. half & half

Dredge chicken, shake off excess. Melt butter in large heavy pot, add oil, brown chicken in batchesabout 5 minutes per side. Transfer to plate. Stir in leeks and shallots, cook 3 minutes, scraping the bottom and stirring occasionally. Stir in carrots, celery, bay leaf and thyme, cook 3 minutes. Stir in broth, ciderand chicken, bring to a boil. Reduce heat and simmer, covered partially until chicken is cooked through, 10 to 115 minutes. For the Dumplings, sift flour, cornmeal, baking soda, salt and stir in dill. Stir in half and half mixing with a fork just until dough is blended. With a large soup spoon scoop out 12 dumplings. Arrange in pot over cooking chicken. Cover 12 minutes. Dumplings are done when an inserted toothpick comes out clean. Discard bay leaf. Serve with green salad.

Cook the chicken and pull it off the bones, or use boneless, skinless chicken breasts. Take 1/2 cup of instant rice per person and add it to a microwaveable bowl. Use 1/4 cup soya sauce per person, 1/4 cup of water, 1/2 cup of leeks per person, and add any other vegetables that you like (preferably frozen, otherwise you will need to cook them before hand). Mix it all together and put it in the microwave. Cook until done.

Just buy a packagae of chickensoup, boil it. Add pieces of chicken filet. Add some vegetables to your choice. (mushrooms, leek, onion, and a small piece of hot red chili pepper) Then add at least one teaspoon curry or if you wish it to be spicier add more. Grate 100 gram Edam cheese when the soup is ready over it. Bon appetit! I make it very often and think it is delicious!

we are having chicken curry and rice (leftover chicken from yesterday) fry onion in a large pan add any veg(I'm using cauliflower swede pots from yesterday )chicken tandoori curry powder 1pt chicken stock 1 can of tomatoes (chopped)and to the boil and then simmer for 1 hour on low heat
