I've shown here some of my recipies, but she says they're a bit complicated for her. Can anyone think of simple things she can make for when her family comes over?

I assure you that these are very good and easy appetizers to make.

Mini Broccoli & Ham Cups

Prep Time: 15 min
Total Time: 30 min
Makes: 2 dozen appetizers or 24 servings, 1 appetizer each

1 pkg. (10 oz.) frozen chopped broccoli, thawed, well drained
1/4 cup chopped sun-dried tomatoes
4 oz. (1/2 of 8-oz. pkg) PHILADELPHIA Light Cream Cheese Spread
1 Tbsp. KRAFT 100% Grated Parmesan Cheese
1/4 tsp. garlic powder
24 slices OSCAR MAYER Shaved Smoked Ham
1/3 cup chopped PLANTERS Smoked Almonds

PREHEAT oven to 350°F. Mix broccoli, tomatoes, cream cheese spread, Parmesan cheese and garlic powder until well blended.
FLATTEN ham slices. Press 1 ham slice onto bottom and up side of each of 24 miniature muffin pan cups. Fill evenly with the broccoli mixture; sprinkle with almonds.

Having a party? Assemble appetizers several hours in advance; cover and refrigerate until ready to serve. Then, uncover and bake as directed.

Baked Crab Rangoon

Prep Time: 20 min
Total Time: 40 min
Makes: 12 servings, one wonton each

1 can (6 oz.) white crabmeat, drained, flaked
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened
1/4 cup thinly sliced green onions
1/4 cup KRAFT Mayo Light Mayonnaise
12 won ton wrappers

PREHEAT oven to 350°F. Mix crabmeat, Neufchatel cheese, onions and mayo.
SPRAY 12 medium muffin cups with cooking spray. Gently place 1 won ton wrapper in each cup, allowing edges of wrappers to extend above sides of cups. Fill evenly with crabmeat mixture.
BAKE 18 to 20 min. or until edges are golden brown and filling is heated through. Serve warm. Garnish with chopped green onions, if desired.
**ALTERNATE VERSION...

We've taken a favorite appetizer and made it over. We substituted PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese and KRAFT Mayo Light Mayonnaise instead of regular cream cheese and mayonnaise. Since these tasty appetizers are baked, they require less hands on time so that you can spend more time with your guests. This baked version saves 80 calories and 6.5 g of fat per serving compared to traditional fried Crab Rangoon.

For Mini Crab Rangoons
Use 24 won ton wrappers. Gently place 1 won ton wrapper in each of 24 miniature muffin cups sprayed with cooking spray. Fill evenly with crabmeat mixture and bake as directed. Makes 12 servings, two appetizers each.

2 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
4 slices OSCAR MAYER Bacon, cooked, crumbled
2 Tbsp. snipped fresh chives

PLACE potatoes in large saucepan; add enough water to cover. Bring to boil. Reduce heat to medium-low; cook 15 min. or until potatoes are tender.
MEANWHILE, mix cream cheese, sour cream and Parmesan cheese; cover. Refrigerate until ready to use.
DRAIN potatoes. Cool slightly. Cut potatoes in half; cut small piece from bottom of each potato half so potato lies flat. Place on serving platter. Top each potato half with 1 tsp. of the cream cheese mixture. Sprinkle with bacon and chives.

Spread softened cream cheese on slices of (Buddig) wafer meat. Put a dill pickle spear on one edge of the meat, and roll up.

I just checked out the santaclaus.com site that was given you - neat!
Just a thought... would your friend be more comfortable with "recipes that kids can make"? Maybe you can Google that.
