If you have put the foil on to stop something burning then put shiny side up to reflect the heat. If you want to heat something, then put dull side out to absorb the heat.

I did some research on aluminium foil after a discusion at work a few months ago. The fact is that it doesn't matter which side you use. Aluminium foil typically has a highly reflective side and a more matte side. This is a result of common manufacturing processes. As foil is easy to tear, the foil is sent through machines in pairs. The side where the foil was in contact with the other sheet is more matte than the exterior side. This unconformity of finish has led to the perception that favoring a side has an effect when cooking. While many believe that the shiny side's reflective properties keep heat in when wrapped on the interior and keep heat out when facing exterior, the actual difference is imperceptible without instrumentation.

It actually makes no difference although many people believe it does. The reason one side is shiney is because of the process by which the foil is made.
That said ...I usually put the shiney side up! lol

It makes absolutely no difference. The reason one side is shinier than the other has to do with the manufacturing process, not some mythical heat reflection notion. When the foil is made the bottom side is continually in contact with rollers and other metal guides, and this contact dulls the surface. The top, stays shiny because it does not come into contact with these objects.
For proof all you have to do is cook two things the exact same way, making the foil side used the only difference. You will find it does not matter.

If you are cooking with the foil, shiney side down. This retains the heat. If you are storing....anyside

It doesn't make any difference that you would notice.Try cooking two bits of meat ,one in the shiny side and one in the dull side.Come back and let us all know the results and settle this question, as it has been asked several times.

Whichever way I tear it off the roll. I don't notice a significant difference when I have it shiny side up or shiny side down, so I don't really care.
