CAMP FIRE CASSEROLE
Use canned foods to help speed up this dish.
750 g round steak, finely chopped or minced
2Tablespoons olive oil
1 onion, coarsely chopped
450g can of red beans (drained and rinsed)
450 g can of mixed beans (drained and rinsed)
450g can of tomato soup or 1 can of crushed tomato's
1 Cup water
2 Tbilisi's golden syrup or 2 Tablespoons dark brown sugar
2 Tablespoons vinegar
3/4 teaspoon ground pepper seasoning
Heat the oil and saute the meat until lightly browned. Combine all the remaining ingredients, cover and cook in a moderate oven/heat/fire coals or this can be done on the stove top, cook for 1 1/2 hours, adding a little water if needed, or meat is tender.
Serves 6
Note: Tomato soup give the meal a robust taste.
This meal is a favourite in our house, in winter or when camping.
Beef Guinness - A simpler/easier Pot Roast
1/4 cup of Oil
4 lbs. of Pot Roast/Bottom round.
salt/pepper to taste
1 or 2 Spanish onions (red)
2 bottles Guinness Extra Stout
1 cup brown sugar
1/4 cup apple cider vinegar
1 basket of mushrooms
How to Prepare:
Browning or siring all sides of meat in hot oil (adding salt/pepper as meat turns) Cover Pot, add sliced onions 1/4 inch thick or wider, cook until all starts to soften, add beer to 1/2 or 2/3 high, based on pot, add sugar, vinegar.
Cover and simmer for 30 minutes to the pound or til done. You can add vegies to this too.
Serve with Mash Potato with gravy!
Serves 5-6
For a quick light meal try omelets or scrambled eggs
OMELET
Beat 2 eggs
2 tablespoons of milk
Dice a rasher of bacon
Chop some parsley or chives
1/3 cup cheese (grated)
Salt & pepper to taste
Heat frying pan, adding a little oil, when hot add beaten eggs & milk, spread around the pan, when starting to bubble, and set, sprinkle bacon, cheese and parsley/chives a little of to the side, gently flip the filled side over into the centre, and then again. the egg should be light brown.
Serve with salad or toast.
SCRAMBLED EGGS
6 eggs
1/2 cup milk
1/2 cup diced bacon
1/3 cup onion chopped
Salt & pepper to taste
Braon bacon and onions. Beat eggs together with milk, pour into hot frying pan, stir until eggs start to thicken and set, add bacon and onions.
Serve with toast or salad
POTATO SALAD
6 potato's chopped into cubes (largish)
2 eggs (boiled, cooled & cut into quarters)
1/2 cup mayonase
1/2 cup bacon (diced)
4 shallots/chives (chopped)
2-3 sprigs of parsley (chopped)
Boil potato's until just tender, drain and cool with cool running water. Place into a large bowl, add bacon, shallots, eggs and parsley, stir through mayonase.
'"GEORGIE'S" SALAD
Continental cucumber
Cherry tomatoes
Bunch of parsley
Spanish (red) onion
Chives/shallots
French dressing
Chop the cucumber into cubes, chop parsley, onions and chives. Cut cherry tomatoes, in half. Mix all together in a large bowl, pour over french dressing, and stir.

Okay this is my meatloaf, it's AWESOME for 30 people I don't know but take all the ground beef add a loaf of fresh bread torn into pieces (this will create a marble effect in the meatloaf, kind of like in a really good steak, and will cut down on the grease at the bottom of the pan) add, I don't know 5 or 6 eggs a head of fresh minced garlic two tubes of ritz crackers (generic is fine) salt to taste pepper to taste and (this is important) a LOT of Old Bay seasoning for 20-30 pounds I'd say at least a good half of a can of it (I don't know what it does to the meatloaf but it makes it incredible, It gives a warm heady spice smell to it) for the topping I slice thick beefsteak tomatoes until they cover the top. I bake it for 45 minutes to an hour until it's almost done and the tomatoes are caramelized, and then I spread tomato ketchup over the top of that and put it back in for about fifteen minutes. The topping is thick and pretty and very satisfying feel free to tweak it all you want.

Classic stew-- be it chicken, lamb, beef or pork.
Get the meat, chop it up(or buy the already chopped in a packet or ask the butcher)
Buy a stew pack of vegetables from the supermarket, chop it all up put the meat, some stock cubes, onion in a big pan and let it cook for as long as is possible. Then add one-two cloves garlic and let it cook through, then add your vegetables and simmer for about an hour.
Once thats done, get some plates, put some cut crusty bread on a plate and voila!! they will love this as it's classic and will keep them warm in winter.

Oh dear! I take it that it is your oven not working? Still this time of the year try to basic stews. Chop up Shoulder of Lamb, Or a Piece Beef/Pork add diced vegetables(this can be any sort or whatever family like), you can get a very wide range of stocks in supermarket, just put into large pot and cook very slowly. Or try microwaving jacket potatoes and toppings like warm tuna, warmed with sweetcorn or just plain. Or try one of my favourites. Cook some Lamb Mince with Onions(keep straining of fat that rises to top), get very Large Potato, cut halfway through microwave till soft, fork up and the add topping.

You can always swap stuff around, eg, if you don't like say something like pork, you could use chicken instead - experiment with different veg and herbs and spices, a plain old ordinary stew can be turned into a curry with the right spices, and remember leftover meat and diced veg (potato, onion, peas, etc). Can be warmed gently, then add (for three of you) six beaten eggs, and there you are, Spanish omelette, nice with salad and crusty bread or a mug of soup - good luck

Potato Gratin:
You need:
potatoes
1 teaspoon butter
milk(can use low fat)
bread crumbs
cheese(like chedder, also low fat is ok)
powdered spices like(sage, thyme,salt, pepper)
Use about 4 potatoes. Peel and dice, boil until you can stick a fork in them easily.
Using another pot add 1 cup of milk, 2 tablespoons of flour, some spices( like garlic powder, sage powder,salt and pepper, about 1/4 t.s. each or to your taste). Boil on medium, not too hard, until the sauce is thicker. Careful not to burn.
Then put drained cooked potatoes into a casserole dish or pyrex glass dish, or a bread pan(it works too). Then pour over milk sauce, sprinkle cheese on top, then bread crumbs, bake about 350F, or cook in the microwave, until it bubbles and is slightly brown. Cool and serve.

chicken and vege stirfry, supermarkets have packs of stir fry vegies already cut up if you don't know what vegies are good for stir fry.
steak, fried mushrooms, boiled potatos mmmmm
vegetable soups are great in the winter, so healthy and very cheap, if you want a good recipe type "vegetable soup recipe" into google, there will be thousands.
Get a jar of curry paste, follow the recipe on the back, make some rice to go with it, yum, easy,
You don't need your cooker for great food, I use mine maybe once a month, and then only for cakes.

Soups are really good at this time of year, easy and filling and really healthy.
For a good tomato soup, cook some chopped onion and garlic with a little bit of olive oil until the onion is clear. Add a bottle of passata (its with the tinned tomatoes in the supermarket), a small tin of chopped tomatoes and some fresh or dried herbs like basil, rosemary, oregano and flat leaf parsley. Heat it up until it just starts to bubble. Add a couple of spoons of low fat creme fraiche and serve with crusty bread.

there are some very simple and easy to make rice dishes / pulaos and lots of different vegetable combinations. hers are mainly veggie dishes
and also try sanjeevkapoor.com - if you want some meat recipes.

cottage/Shepard's pie try turkey mince instead of lamb or beef use a chicken based bis-to gravy as well less fat and a lot tastier
casseroles you can get a tinned red wine sauce for chicken. chicken fillets and the sauce with roast veg/jacket spud
beef casserole nice bit of beef 1 glove of garlic,onion, carrots, potatoes and veg stock cook slow for couple hours the garlic can't taste it but the meat is very tender
toad in the hole with a twist aunt Bessie big Yorkshire a smallish one sausages, roast veg, inc pots, a bit of gravy
cook the sausage in oven roast your veg and pots ( roast in little olive oil)cook the Yorkshire to serve use Yorkshire as a plate sausage on bottom put in the veg and pots make a bit of bis to
you could also use steamed veg or cook some veg in the micro
jacket spuds - put anything like baked beans spag bol any thing from a tin you can heat in the micro.

If you can get a nice griddle pan, grill some meat, boneless chicken, turkey or fish fillets
Steam some veggies
and a nice salad
Everyday try something different
Mix and match yr veggies with different meats
Its healthy and filling too
