The Twice Baked Jacket Potatoe

Baked the potatoes in tin foil until soft, scoop out the lovely flesh and keep the skins aside, add whatever you like to the potatoe!

I like, chives, milk, butter, bacon pieces then you mash it all together place back into the skins

put some grated cheese on top and bake again in the oven till the cheese is melted

Lovely with a nice green salad or whatever you like!

Firstly, I prepare the potato with some good butter - split the potato and mash it in a little. Then I get a good handful of grated extra mature cheddar, and pile it on top. Then I pour a heated tin of heinz baked beans (or barbecue beans) all over the top, to melt into the cheese, which melts into the potato, and makes a lovely gooey delicious mess all over the plate, which I proceed to clean up using the soft potato and crispy jacket (great for absorbing bean juice!). Yummmmmmmmm!

I love the classic cheese and coleslaw. Bake ur potato, scoop out the insides and mash it like mashed potato, stir in cheddar cheese and cloeslaw, add a wee bit pepper, put the mixture back in the potato skin, top with more cheese the cook for about 10 mins at a low heat then scoff the lot. Yummy!

Medium sized potato's take approximately 1 hour, cool, slice the top of the potato, scrape out the inside.

Baked potato
Bake potato's in oven until cooked (fork should pierce the skin with ease). Cut a cross into potato, add a dob of butter, then sour cream, chopped cooked onions, & bacon, then top off with grated cheese, or coleslaw.

Twice baked potato
Bake potatos in oven until cooked, scrape most of potato filling, mash with butter and cream and a little cheese, then add bacon, onions or chives/shallots, etc. gently fill the potato shell, sprinkle with more cheese and parsley and place in oven until cheese has melted.

You mix any thing into the potato mixture, and place back into the potato shell. So try any of your favourite foods.

Good quality butter, grated Cheddar and black pepper is best. The potato is the most important bit. White pepper is valid alternative.

I have added Silverado Chilli-con-carne out of a tin, Greek Yoghurt with the above, even chopped cucumber and garlic in the Yoghurt.

Scoop out the filling, mash with butter and black pepper, add chopped fried bacon and onion, crumble some blue cheese and lightly mix together, pop in microwave for 15-30secs to reheat, then re-stuff the potato and place under the grill until brown and golden.

Scoop out the potato. Mix the insides with baked beans and cheese.

Fill the two halves of potato up again and grate some more cheese on top, sprinkle some worcesterhire sauce on top, and stick under the grill until the cheese on top has melted.

Dice half an aubergine and a handful of mushrooms, fry them until soft (with a few small pieces of bacon or prosciutto or pancetta if you want), then take the pan off the fire and melt a large piece of gorgonzola into it. Stir a few times and serve with a jacket potato. Mmmmmmmmm
