its very easy cut all those vegies in the same shape u ve seen in restuarant. put some oil in the pan then start adding veggies one by one carrots first then peas then cabbage and the last is spring onion just planche(cook on high flame for a few minutes) the veggies otherwise it will become soggie.turn off the flame n season it according to ur taste with soya sauce, salt, agino moto, black pepper. cook rice separately by pouring rice in boiling water add some salt n cook till its soft then drain excess water. mix rice n veggies n cook it on low heat for five minutes . ur dish is ready.

Ingredients for easy fried rice:




2 cups Rice
3 tbsp Oil
100 gms Beans Finely Chopped
2 Carrot Finely Chopped
1 Onion Sliced
100 gms Cabbage Finely Chopped
2 Spring Onions Finely Chopped
2-3 Green Chilies cut lenghtwise
1 tsp Ginger Chopped Finely
1 tsp Garlic Finely Chopped
2 tbsp Soya Sauce
Salt & pepper to taste


How to make veg fried rice:
Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
Boil water, add rice and little salt.
Cook uncovered on low heat till rice is tender.
Take care not to overcook the rice. Each grain of rice should be separate.
When rice is done, drain and add soom cold water and drain again using a large seive and set aside.
Heat oil in a kadhai / large pan and stir fry all the chopped vegetables.
Cook for 3-4 minutes.
Take care that vegetables are not overdone, they should be crisp.
Mix salt and pepper to taste.
Add the cooked rice and mix well. Now mix the soya sauce to it.
Cook the veg fried rice for 2-3 minutes and serve hot.

SIMPLY SHRIMP FRIED RICE

1-1/2 cups rice, cooked
20-25 small shrimp
1 onion
1 red pepper
1 egg
3/4 cup peas
1 clove garlic, minced
1/4 cup soy sauce
butter or oil

Cook rice as directed, approximately 1-1/2 cups.
In a medium-sized frying pan, sauté 1 small chopped onion, 1 red chopped pepper, and 3/4 cup frozen peas in butter or oil. Set aside.

Next, sauté 20-25 small shrimp with 1 large clove of garlic in butter or oil. When lightly brown, add vegetable mixture.

After just a couple of minutes, add frying pan mixture to rice pot. Quickly scramble 1 egg and add to pot as well. Add 1/4 cup of soy sauce, using judgement and preference, of course.

Stir, simmer for a few minutes and enjoy.
