INGREDIENTS
1 pound lean ground beef
1 (32 ounce) jar spaghetti sauce
32 ounces cottage cheese
3 cups shredded mozzarella cheese
2 eggs
1/2 cup grated Parmesan cheese
2 teaspoons dried parsley
salt to taste
ground black pepper to taste
9 lasagna noodles
1/2 cup water
DIRECTIONS
In a large skillet over medium heat brown the ground beef. Drain the grease. Add spaghetti sauce and simmer for 5 minutes.
In a large bowl, mix together the cottage cheese, 2 cups of the mozzarella cheese, eggs, half of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
To assemble, in the bottom of a 9x13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 3 uncooked lasagna noodles, 1 3/4 cup of the cheese mixture, and 1/4 cup sauce. Repeat layers twice. Top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/2 water to the edges of the pan. Cover with aluminum foil.
Bake in a preheated 350 degree F(175 degrees C) oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

Easy Lasagne
Prep Time: 20 minutes
Start to Finish: 1 hr 20 minutes
Ingredients:
9 pieces (8 oz.) Lasagne Noodle cooked
1 lb. ground beef or turkey
3 cups (about 26-oz. jar) spaghetti sauce(Your Favorite)
1-1/2 cups water
1-3/4 cups (15-oz. container) ricotta or small curd cottage cheese
2 cups (8 oz.) shredded mozzarella
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Instructions:
Heat oven to 350°F.
In 3-quart saucepan over medium heat, brown meat; drain. Add spaghetti sauce and water; simmer about 10 minutes.
Meanwhile, in large bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper.
Pour about 1 cup sauce on bottom of 13x9x2-inch baking dish.
Arrange 3 COOKED pasta pieces lengthwise over sauce; cover with about 1 cup sauce.
Spread one-half cheese filling over sauce.
Repeat layers of lasagne, sauce and cheese filling.
Top with layer of lasagne and remaining sauce; sprinkle with remaining mozzarella cheese. Cover with foil.
Bake 45 minutes. Remove foil; bake additional 15 minutes or until hot and bubbly.
Let stand 10 minutes before serving.
10-12 servings.

You can cook the noodles if you like, but if you just bake them with lots of sauce, they will come out fine!
Basically, lasagna is layers. Here are some layers you can add:
1. Soft cheese like ricotta or cottage cheese
2. Stretchy cheese like mozzarella or provolone
3. Seasoned meat (I like ground pork with hot peppers and fennel and onions)
4. Tomato Sauce -- which should surround each noodle layer, esp. if you are using uncooked noodles.
5. Veggies -- sauteed onions, peppers, mushrooms, and/or carrots.
6. Lasagna noodles (or baked or steamed slices of eggplant)
Choose the ones you like, but I don't think it's lasagna unless it's got noodles/eggplant, tomato sauce and a stretchy cheese. You can build it as tall as you like, but two or three inches is pretty normal, and easier to serve. Fix it in a loaf pan if you only have two to four people, in a 20 cm. square cake pan for more people.
Start with tomato sauce, layer however you like to layer, and finish with cheese.
Bake in a 175 C oven (350 F) for 30 to 40 minutes or until the top cheese is brown and toasty.

Go to www.allrecipes.com. They have tons of good lasagne recipes and they're rated by how good they are. I got my recipe from there (unfortunately I don't remember which one I used) and it turned out really good.

1/2 pound Italian sausage
1 cup low-fat ricotta cheese
3/4 cup shredded part-skim mozzarella, divided
1 tablespoon olive oil, divided
3 cloves garlic, minced
1 tablespoon crushed red pepper flakes
2 tablespoons chopped fresh basil leaves
2 (14-ounce) cans stewed tomatoes, diced
1 cup chopped red onion
2 tablespoons roughly chopped fresh oregano leaves
2 tablespoons roughly chopped fresh Italian parsley leaves
2 tablespoons roughly chopped fresh thyme leaves
12 medium button mushrooms (about 1 cup), store bought and pre-sliced (from produce aisle)
4 lasagna pasta noodles, cooked al dente per directions on noodle box
Preheat oven to 350 degrees F.
Remove the casing from sausage and discard. Heat a nonstick saute pan over medium-high heat. Add the turkey sausage and brown until thoroughly cooked, about 1 1/2 minutes. Drain and discard any grease in the pan. Remove sausage from heat and add the ricotta and 1/2 cup mozzarella. Stir until well blended. Set aside.
Heat 1 teaspoon olive oil in a small, non-stick saucepan over medium-high heat. Add the garlic, crushed red pepper flakes, and chopped basil and saute until the garlic just begins to soften, about 1 minute. Add the tomatoes and bring to a simmer. Remove from heat and set aside.
Heat the remaining 2 teaspoons olive oil in a large nonstick saute pan over medium-high heat. Add onion, oregano, parsley, and thyme and saute until onions are just soft, about 2 minutes. Add the mushrooms and continue sauteing until the vegetables are tender, about 2 minutes. Remove from heat and add half of the tomato sauce to the sauteed vegetables.
To assemble, line the bottom of a lasagna pan (roughly 13 by 9 inches) with 1/4 of the tomato sauce. Top with 2 lasagna noodles. Then spread half of the sausage mixture on top of the pasta. Cover the sausage layer with about half of the vegetable mixture. Top the vegetable layer with the remaining sausage mixture. Then top that layer with the remaining lasagna noodles and add the remaining tomato sauce over top. Sprinkle with the remaining mozzarella. Bake for 25 minutes. Remove from heat and let stand for 5 minutes before cutting.
