If you found him/her attractive enough to see again, let him/her know that you're uncomfortable with the whole gender thing and you want to go slow...
I think a hermaphrodite or transgendered person fully expects you to be concerned...giving a sensitive, honest voice to those concerns makes you a valued ally....and if it works - a very trustworthy partner.
If you never want to see him/her again...don't worry about it.
