There are different types of bariatric surgery. It depends which one you are writing about. Each doctor has his/her own way of doing them as well. Some make the stomach into a double pouch (like with the banding operations) so first the food goes into the tiny pouch, then it squeezes through the banded area into the main stomach. Other types leave only the small pouch and section the rest of the stomach away completely and I know at least one version does remove the extra stomach material.
I believe with all of them the intestines are kept, just re-routed.
