Lovely stuff! Calamari in Italian cooking, and ikka in Japanese. I've had it raw in sushi and sashimi, deep-fat fried as tempura (rings and bars), in stir fry, grilled over a barbecue on a stick, stuffed with rice and stewed . . . oh, gosh. The only way I don't like it is when they cook it with all the innards still in.

If you remove the innards, it doesn't have much taste -- in fact, they often score it with a grid pattern to make it more tender and to catch the sauce and give it some flavor. But the texture is wonderful! Chewy, but just tender enough that you don't feel like you are eating rubber.

If you get the chance, give it a try! Squid sounds disgusting, but several of the world's most famous cuisines make a place for it.

With squid, it's not so much the taste that's unusual. It tastes vaguely seafood-ish, maybe like fishcake if you've ever eaten that. It's just got a very chewy texture when it's cooked. I think I've eaten it raw and the texture is about the same.

It's also chewy when it's dried, just....drier. And usually saltier when it's prepared that way.

It depends... if it is fresh it tastes delicious, but if it's old it tastes rubbery and nasty. It's good as sushi at a Japanese restaurant, but my favorite is deep fried rings (calamari). Enjoy!
