The best thing to do is to just be yourself. Never try to be something that your not. Well to show him that you like him why not do nice things for him and ask him if he wants to have lunch with you one day. Try to be interested in what he has to say, but don't make it to obvious. If he agrees to have lunch with you and all goes well why no ask him to have drinks with you after work or to go and see a movie on your days off. There are a couple of ways to show that you like him, like give him a few glances while he is looking at you, ask him out for a casual lunch, Send him an email, leave post-it notes on his desk just saying hello.

The way to know if he likes you is if hes looks at you on a reguar basis, go out of his way to say hello to you. well this is not for sure but its a starter.

I'm not sure why you wouldn't want to just talk to him. Verbal communication is the perfect way to express ourselves, your'e just making it harder on yourself in any other form, but if you insist, maybe looking at him, winking, or being around him constantly if you can. You can sometimes tell someone likes you if they look away after you spot them looking at you, talk to everyone else but you.
