I saw a guy from Fiji standing before a tree in his front yard, with his hands clasped, and seemed to be in prayer. Is this a religion, and if it is, what is it ?

It could be Hindu. The Tulasi plant is regarded as embodying the presence of Lakshmi, if I understand correctly. So it's not so much like they are praying to the tree, but to God, via the tree.

it could have been his marker for which way to face.

was he Indian or indigenous?
could have been shamanistic in some way if he was a fiji islander, though christianity has ruined most of their original beliefs.
