there is proscuitto and also prosciuttini too, both come from the same part of the pork shoulder....and air cured for several months......but the difference betwen one and the other is the prosciutto is cured with bone

is a mild but sweet ham just covered with a wet black pepper coating all over the top.The more the pepper the better the taste..trouble is nobody sell this delicious ham in Miami anymore for my Easter pie ( A traditional thing.)

Prosciuttini is the skin off the weiner and the balls. Then wrapped around the spicy Ham and slow cooked.
