Hi, the galbladder concentrates bile (which comes from the liver). Bile emulsifies fats that you eat so that the body can absorb them for nutrients.
Risks...any surgical procedure has risks, but the majority depend on your current state of health and what risks you pose to be put to sleep.

The gall bladders store bile, which carries used hormones out of your body. It also digests fat, which gives you vitamins A, E, D, and essential fatty acids. You need these vitamins and essential fatty acids for brain function, sex hormones, vision, bone building and many other vital functions. Even without a gall bladder, your liver will still produce bile and you will receive its benefits. However, without a gall bladder to store bile, your digestive system no longer receives bile in the quantity that it once did. If they discover gall stones, then please try the following before considering surgery: before your evening meal each night and on an empty stomach, mix a few spoons of lemon juice with a few spoonfuls of olive oil. Sounds disgusting, I know, but the lemon juice will break down the gall stones and the olive oil will give them an easy exit. It really works and will save you from having to get surgery.

A couple people in my family had their gall bladder out and have no health issue from it. I believe it is pretty much like having you appendix out. The risks of having it removed are the regular risks of having surgery. If you don't get it out and are having problems it could kill you. Don't worry though. If you are under the care of a doctor you will be all set.
