Melt butter. Let it sit in a fairly vertical container, like a glass measuring cup. the milk solids will settle to the bottom. Skim the foamy junk off the top, then use just the clear butterfat on top of the milk solids. This is AKA ghee or clarified butter. Great for high-temp searing and for dipping seafood!

Butter can substitute for ghee though it won't have quite the same flavor

Plain cooking oil is often a decent substitute, though lacks the oddly nut-like flavor of ghee

Ghee is cooked clearified butter, I use a very good quality virgin cold pressed olive oil. It does not change the taste of the curry but does make it healthier. Ghee is nice to cook with since it does not burn and need not be refridgerated since the milk solids have been removed. Olive oil is a heart healthy oil but cook at a lower temp to stop any burning.

Clarified butter.. it is essentially the same as ghee, but all of the milk solids have been removed. Another healthier alternative for a cooking medium that stands up well to high heat is grapeseed oil.... My first instinct would be clarified butter, but that smells too unique. Butter is an animal derivitave and will give your food a different taste. Just because it looks like ghee doesn't mean it will suit it as a replacement.

Ghee is made from coconut oil, so you want to go with something that is closer to that. Go with good-old vegetable oil... it's better for your heart anyway. Since ghee is a bit more solid, you might want to try Crisco vegetable shortening, but I would go with vegetable oil (I prefer corn oil.)
