I would think 9lbs burger,(1lb makes about 6 tacos) 2 heads of lettuce and 9 tomatoes(6 tacos per tomato), 2 large onions.
Don't forget the cheese, salsa and sour cream.
48 oz. sour cream, (3 -16 oz containers)
3-4 1lbs of cheese and 2-3 jars of salsa.

Hmmm. . . a math problem. Well, I would think you wouldn't need more than 2 ounces of beef per taco, which would mean 100 ounces after cooking. 7 pounds of ground beef would be 112 ounces, which should be more than enough. I like to chop up some onions and garlic and cook them in with the beef. One head of finely shredded iceberg should be enough lettuce, a dozen roma tomatoes, and three medium-sized onions should do it. Good luck!
