Pumpkin-Raisin Bread

Yield: 15 servings
1/3 c Vegetable oil 1 tb Baking powder
2 tb Sugar 1/2 ts Baking soda
2 Eggs 1/4 ts Salt
3/4 c Cooked or canned pumpkin 1 ts Ground cinnamon
1 c Unbleached enriched wt.flour 1/2 c Raisins
1 c Whole wheat flour 1/4 c Lowfat milk or orange juice
Beat together the oil, sugar, eggs, and pumpkin until light and
fluffy. Combine the flours, baking powder, baking soda, salt,
cinnamon and raisins in a bowl. Stir into the creamed mixture with
the milk or orange juice.
Pour into an oiled 9 x 5 inch loaf pan. Bake at 350 F for 40 to 45
minutes.

Preparation Instructions
1 Preheat the oven to 350 degrees F. In a medium bowl, combine the whole-wheat flour, baking powder, cinnamon, and nutmeg. In a large bowl, combine the remaining ingredients. Add the dry ingredients slowly to the large bowl and mix until blended. Do not overbeat. Pour the batter into a 9-inch loaf pan and bake for 40 minutes until the tester comes out clean.

google a recipe for pumpkin bread on the internet. You can try www.lowcarbfriends.com and go into their recipe rooms. Almost any recipe will do!
Just replace the "flour" with 100% whole wheat flour.
Replace the "sugar" with "splenda"
You can also use egg whites or (egg beaters) instead of whole eggs.
Other than that, the pumpkin, cinnamon and all that are good for you. You only need the whole wheat flour, canned pumpkin, pumpkin spice (or cinnamon, nutmeg, and cloves), ginger (maybe), salt, eggs, and water. The ingredients are really simple and it's super easy to make!

1/2 tsp. salt
