No it is not necessary but the use of over-ripe bananas make the bread moister and more flavorful. Also it let's you use up your bananas instead of throwing them out.

It is not necessary, but if you want the sweetest and most bananay bread, then yes. The starch in a yellow banana turn into sugars and release the banana oil from the peel more into the sugary goo inside. With the yellow bananas you may want to add maybe a little more sugar (1/4 cup) to the recipe and it may be bananay enough if they smell like bananas.

No, it's not necessary. I've made banana bread using both. When I use bananas that are still yellow, I use a food processor to blend them. It makes it much easier. It still tastes great!!

I think I might have to make a banana bread now. You are so evil for asking this question! LOL

NO it isnt, ive made many a banana bread. I dont like the dark over ripe bananas, they tend to make the bread very dark. They dont taste any better then regular ripe yellow bananas. They all smash the same and i always add a teaspoon of banana extract to mine. There sooo yummy, i might have to make one now, lol.

Not necessary, but Banana's should at least have brown spots on the peel for making bread. The flavor is better!

Bananas Foster 1/4 cup butter 2/3 cup dark brown sugar 3 1/2 tablespoons rum 1 1/2 teaspoons vanilla extract 1/2 teaspoon ground cinnamon 3 bananas, peeled and sliced lengthwise and crosswise 1/4 cup coarsely chopped walnuts 1 pint vanilla ice cream Directions 1.In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream.

Yes and I made banana bread yesterday. They must be mashed, and overripe bananas are perfect for this.

Yes they taste better. Your bread will taste more banana-ie with overripe bananas.

It is if you want to use less sugar.
As ripe bananas are so sweet and have heaps of neatural sugars in them.
Otherwise more sugar is needed to balance out the flavour.
