Carrot cake is the only thing that comes to mind. Squash and sweet potatoes can be used in a pie in place of pumpkin, but I don't know if that also applies to carrots. You can make candied carrots the same way you make candied sweet potatoes, with butter, corn syrup and brown sugar, but that's more of a side dish than a dessert.
