I don't have swiss cheese. Have you ever used cheddar or an Italian cheese blend for quiche?

Yup I have and it turned out just great! Here's a couple recipes that use cheddar cheese :)

Broccoli Quiche

INGREDIENTS:
1 9-inch pie shell
1 (10 oz) package frozen chopped broccoli, about 1 1/2 cups
8 ounces fresh mushrooms, thinly sliced
1 cup milk
3 eggs, beaten
2 tablespoons margarine, melted
1 tablespoon flour
1 teaspoon salt
1/2 to 1 tsp pepper
1 cup shredded cheddar cheese, divided
PREPARATION:
Preheat oven to 375 degrees. Bake pie crust about 10 minutes or until bottom is slightly brown. Let cool. Cook broccoli until tender; drain well. Combine milk, eggs, margarine, flour, salt, pepper and 3/4 cup cheese; whisk until well blended.Sprinkle remaining 1/4 cup of cheese over crust. Layer broccoli and mushrooms on cheese. Pour milk and egg mixture over all. Bake at 375° for 35 to 45 minutes or until a knife inserted in center comes out clean.
4 to 6 servings.

Bacon and Cheddar Quiche

Ingredients:

9"pie crust
6 eggs
2 c. heavy cream
1 c. cheddar cheese
8 oz. broiled/pan-fried bacon
Directions:

Preheat oven to 425 degrees (218 degrees Celsius).
Whisk eggs and cream in a medium mixing bowl until well blended.
Stir cheese into egg mixture.
Sprinkle bacon over pie crust.
Pour egg mixture over bacon.
Bake for 15 minutes at 435 degrees Fahrenheit (223 degrees Celsius). Then reduce heat to 325 degrees Fahrenheit (162 degrees Celsius) and bake for approximately 35 minutes longer. Quiche is finished cooking when a knife inserted in the middle comes out clean.
Let the quiche cool for a few minutes before cutting.
Serves: 8

I don't care for swiss cheese so I substitute an equal amount called for of cheddar, jack and mozza. I make quiche quite often and have found this to be better than the original, no loss of flavor or texture. For extra zip try pepper jack cheese.

Being a trained and certified chef, (though I don't cook for a living - and never will), the answer is yes. You can actually use any cheese you prefer. However it does depend on the style of quiche. While usually considered French - which it normally is, it has been adapted by several nations and cultures. Is it American? Asian - and what country on that continent as they each have their own local recipes? English, German, Italian, Jewish, Mexican, Russian, Spanish, etc... As well as all of Central & South America. Not to mention Austrailia!

I make quiche at artwork particularly many times. only mixture approximately 6 eggs, a cup or so of complete milk and your popular seasonings ( i exploit onion and garlic powders, salt and pepper)beat properly and pour over your filling (cheese and extremely almost the rest). Fill to the precise of the crust yet be conscious that it's going to sing his own praises some. i like to place broccoli or spinach or any leftovers. Bake approximately an hour or til a toothpick comes out sparkling. Quiche is so versatile - it somewhat is a great thank you to apply up leftovers. perchance i'm going to make one at artwork day after today.

Well its really up to you base on what you really like. The only problem that i know is that cheddar cheese has a lot of oil especially when it is used for baking.

Any cheese that you like should work. I love cheddar cheese and wouldn't think twice about using it!
