"Eyes" usually mean an older potato...
If there are ALOT I would throw it out...
Yes they can be used as mashed potatoes.
Though some potatoes are better for baking some for boiling...
With potatoes..
Never buy or use a potato that has a green tint to it..
It has been exposed to the light for a long time so it is
better not used or bought...
When to throw out???
If a potato is green, soft or smells bad..
do not use....

I do at home. If the potatoes aren't green, I scrape off the eyes. And they make perfectly good masheds.

DON'T EAT THE EYES! If they are really covered and large - 86 the potatoe. If not, cut them out and use anyway you choose. Black marks can be cut out too.

They are still good to cook with with eyes. They turn green or dark brown when they are bad. And they do have an e in it. Dont know what that guy was taking about

yes they are okay to cook. yes make sure you cut them off. usually when you peel a potatoe the eyes just peel right off too.
