Fish can be tricky to scale. They're slippery. The easiest way is to get a scaler kit, available at most bait shops and sporting goods stores. It has a wood or plastic board with a clamp at one end. Lay the fish on the board and clamp the tail to hold it firm. Take the fish scaler that comes with the kit, and scrape from tail to head. When you've removed all the scales, flip the fish over on its other side and repeat.

Salmon DO NOT require scaling...Otherwise you will need a sharp, highly flexible filleting knife. On a flat surface, hold the fish by its tail, and scrape away from you with a knife. This should lift and remove the scales from the fish.

Or use a fish scaler; one of those fun gadgets that just take up space in your kitchen drawers.

Really depends on the fish. On bass and similar fish, I usually go from head to tail with a butcher's knife. It shortens the time and helps overall. Also, when you get the fish done, for filets, soak the fish in milk, it won't taste too strong of fish.
