It's called the "giblets bag", full of "giblets": heart, gizzards, liver (already listed above).

there's a bag in the neck area or and the cavity of the body that has the liver, heart and the neck, don't throw it away ,you're going to use it for your gravy well I never cook the heart I do throw it away
