Because red hair is referred to as auburn, ginger or titian. Ginger is a yellowish or reddish brown
ginger - adj : (used especially of hair or fur) having a bright orange-brown color; "a man with gingery hair and bright blue eyes"; "a ginger kitten"
The term has been around since before Gilligan's Island. It's derived from Middle English, so before 1000CE.

i've got by no skill heard "gingers" used as a noun, yet I relatively have heard the term "ginger-haired" to seek advice from a definite coloration of pink hair. I doubt this is a uncomplicated term everywhere; plenty extra probably, basically some imaginitive wordplay by skill of the twisted minds of South Park.
