slice them into thin pieces. most food processors will do this quite well for carrots, if you are going to do it yourself
wash and peel carrots cut into two or three pieces then
slice those sections lengthwise repeat this till you have a nice pile of carrots. for tomatoes just keep quartering it until you can no longer quarter the tomatoe

Julienne is a type of a cut. It's supposed to be about the size of a match stick. It's usually 1/8" X 1&1/2" (which is classically an Alumette cut) - 2" to 1/4" X 1&1/2" - 2" (which is classically a Batonette). Depends on who you ask or what the Chef wants.
A classic Julienne is 1/16" x 2".

Julienne, is a type of cut...Foods that have been cut into thin, matchstick strips. The strips may then be cut into whatever length is desired. If the object is round,(like a carrot) cut a thin slice from the bottom so it will sit firmly and not roll on the work surface

You have to cut them in thin strips.
You can do this by cutting them in pieces of 5 cm and then keep cutting them in the length of the pieces.
You use them a lot in salads.
