For many people, eating beans causes intestinal discomfort, or gas because it is difficult to digest complex sugars in beans. The main reasons for soaking dried beans is to soften and return moisture to them, and to break down the oligosaccharides (the indigestible sugars that cause gas).

Soaking does rehydrate the bean which does make them easier to cook. However, if you soak then dump the soak water, then rinse the beans and cook with new fresh water you are leaching the beans and removing some of the excess phosphorous from them They beans should soak at least two hours and preferably overnight to achieve this goal. Diabetics and persons with renal problems should fix beans and potatoes both by this method.

You don;t have to soak beans before you cook them, but it makes the cooking time faster. Soaking them softens them up. You can make it even faster by bringing the beans to a boil for just a few minutes before you leave them to soak.

soaking the beans overnight help remove the gas in them...also helps cook faster....
