Eggstra Easy Taco Salad
(Makes 4 servings)

4 hard-cooked eggs
4 cups torn salad greens
1/4 cup chopped onion
4 teaspoons taco seasoning mix
4 slices bacon, crisp-cooked, drained, and crumbled
2 medium tomatoes, chopped
1/4 cup sliced pitted ripe olives, optional
1/2 cup bottled reduced-fat Italian salad dressing
1 cup (4 oz.) shredded reduced-fat Cheddar cheese
1/2 to 1 cup (1 to 2 oz.) tortilla or corn chips
Parsley sprigs, optional

Wedge one of the hard-cooked eggs and reserve 4 wedges for garnish. Chop remaining eggs. On 4 individual salad plates or in 8x8x2-inch baking dish or 1 1/2-quart serving dish, layer salad greens, onion, chopped eggs, seasoning, bacon, tomatoes, and olives, if desired. Cover and chill several hours or overnight. To serve, top with dressing and cheese. Garnish with tortilla chips, reserved egg wedges, and parsley, if desired.

Layered Omelette Cake
Serving Size : 6

Omelettes
10 eggs
1/4 cup water
Salt, pepper and hot pepper sauce, to taste
1 tsp butter, melted
Cheese Sauce
3 tbsp each butter and flour
1 1/2 cups milk
Salt, pepper and nutmeg, to taste
1 1/2 cups shredded Cheddar cheese

Filling
2 pkgs (300 g) frozen spinach, thawed
1 tbsp butter
1 small onion, finely chopped

To make omelettes: Beat together eggs, water and seasonings. Over medium-high heat, melt butter in a 9-inch (23 cm) nonstick skillet. Pour 1/2 cup (125 mL) egg mixture into skillet, tilting skillet to cover surface. Cook 2 to 2 1/2 minutes or until set. Slide omelette from skillet. Repeat to make 4 more omelettes.

To make cheese sauce: In a medium saucepan over medium heat, melt butter. Stir in flour and cook 1 minute. Stir in milk; cook and stir until mixture is thickened. Reduce heat and simmer 2 minutes, stirring occasionally. Season to taste. Stir in 1 cup (250 mL) cheese until smooth. Remove from heat.

To make filling: Press over spinach to drain well. In a large skillet over medium heat, melt butter. Add onion; cook and stir 3 minutes. Add spinach and cook over medium-high heat until liquid is evaporated. Stir in 1 cup (250 mL) of cheese sauce. Adjust seasoning.

Place one omelette in a greased 9-inch (23 cm) springform pan. Alternate 4 layers of spinach filling and omelette, ending with an omelette on top. Top with remaining sauce and cheese. Cover with foil and refrigerate until ready to bake or overnight. Preheat oven to 375°F (190°C). Remove foil. Place pan on baking sheet and bake until top is golden and mixture is hot, 35 to 45 minutes. Cover and let stand 15 minutes. Remove sides of pan. Serve in wedges.

Club Omelette

8 eggs
1/2 cup water
Salt and pepper, to taste
Cooking spray
Ketchup
2 thin slices deli turkey
2 thin slices deli ham
2 thin slices provolone cheese
1 tomato, sliced

Beat eggs with water; season with salt and pepper.

Spray an 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium heat.

Pour in one third of egg mixture. As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set. Slide onto a plate. Invert back into skillet to cook completely, about 1 minute. Slide onto a warm serving plate. Repeat procedure to make two more omelettes.

Spread one omelette with a thin layer of ketchup. Layer with half the turkey, ham, cheese and tomato slices; top with an omelette. Repeat layers with remaining ingredients. Cut into 4 wedges.

Mexican Lasagna
(Makes 6 to 8 servings)

6 eggs
2 tablespoons water
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
5 large (10-inch) flour tortillas
1 can (15 oz.) refried beans with green chilies, divided
2 cups (8 oz.) shredded reduced-fat Cheddar cheese, divided
1/2 cup part-skim ricotta cheese
1 jar (12 oz.) salsa, divided
1 cup shredded zucchini
Cilantro sprigs, optional

In medium bowl, beat together eggs, water, chili powder and curnin until well blended. In 10-inch skillet over medium heat, melt butter. Pour in egg mixture. Cover and cook over low heat until eggs are almost set, about 7 to 9 minutes. Set aside.

Place a tortilla in bottom of lightly greased 9 or 10-inch springform pan. Spread with 1/2 of the beans and 1 cup of the Cheddar cheese. Top with another tortilla, ricotta cheese, and 1/2 cup of the salsa. Top with another tortilla, the reserved cooked egg and 1/2 cup of the salsa. Top with another tortilla, the remaining beans, the zucchini, and 1/2 cup of the Cheddar cheese. Top with the remaining tortilla.

Bake in preheated 350°F oven 20 minutes. Remove from oven and top with remaining salsa and Cheddar cheese. Bake 10 minutes more. Let stand 5 to 10 minutes. Remove rim of pan and cut into wedges to serve. Garnish with cilantro sprigs, if desired.

Grits Casserole

This recipe is for a crowd, but you could easily cut it in half..

6 cups water
2 cups uncooked grits
1/2 cup butter, divided
3 cups shredded Cheddar cheese, divided 1 pound ground pork sausage
12 eggs
1/2 cup milk
salt and pepper to taste

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
2. Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
3. In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.
4. Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.
5. Bake 30 minutes in the preheated oven, until lightly browned.

Frittata, Quiches and one with veg and meat like a cassorole. You can vary the meats and vegetables, potatos, mushrooms, peppers and cheeses. If your feeling adventurous, try a souffle, but don't be disappointed if it does not work the first time, I was chef for 20 yrs in Hotels and Restaurants and I had my mishaps to.

Just be creative, and make it fun, ask you family, as you want to make something everyone will eat and enjoy.

Strapatsada (Mediterranean Vegetable-Egg Dish)


Amount Measure Ingredient -- Preparation Method

Heat oil in non stick skillet. Saute onion until soft. Add 1 cup of choice
of vegetables. to “swerat” over low heat until tender but not mushy. Stir in
tomato with the beaten eggs. Add cheese now if you are using it. Season
lightly. No salt if using cheese. Stir until lightly scrambled. Divide into
6 servings. Serve hot with lemon wedges

i've got a good one that i discovered by accident.....i use it for breakfast, lunch or dinner depending on my mood

it starts with hamburger helper.....the cheesy hashbrown one
i use sausage instead of hamburger, but i cook it like hamburger.....where it is browned in crumbly pieces. then follow the hamburger helper instructions for making the hashbrowns. BUT DO NOT USE THE CHEESE SAUCE PROVIDED IN THE BOX!!!
scramble the eggs, grate some cheese, and make a burrito out of it.
there are onions in the hashbrowns that add a great flavor!

How about flaked smoked haddock or (smoked salmon they sell packs ready done in m/s) mixed with lightly done scrambled eggs seasoned with black pepper and salt to taste served on toasted bagels or its great with a salad and new potatoes

Pizza Lite
½ c. all-purpose flour
1 tbsp. grated parmesan cheese
½ tsp. garlic salt
¼ tsp. Italian seasoning or oregano
8 egg whites
1 tsp. cream of tarter
1 can pizza sauce (8 oz.)
1 small can mushrooms
meat of your choice (pepperoni, ground beef, etc.)
1 medium green pepper, cut into rings
1 ½ c. grated mozzarella
Stir together flour, parmesan cheese, garlic salt and seasoning. Set aside. In large bowl, beat egg whites with cream of tarter at high speed until stiff. Gently fold in reserved flour mixture, thoroughly.

Spread evenly in a well-greased 12-inch pizza pan or 13x9-inch baking pan. Bake in preheated 375 degree F oven until firm and delicately browned at edges, about 12 minutes. Remove from oven.

Spread crust with pizza sauce, top with meat, mushrooms, peppers and cheese. Return to oven for 8-10 minutes, until cheese is melted.

This crust contains no fat!
