Breadcrumbs are just filler. You can make a great meatloaf without breadcrumbs! Mix the meat with spices and a little liquid such as ketchup or bbq sauce. The trick is not to handle the meat too much or it gets gooey. Put the meatloaf in a breadpan and cook. It will keep its form and taste much better because you don't have all those breadcrumbs.

I usually do not even use bread crumbs...especially dried. I just cube up some slices of white bread and add that or about 3/4 cup of quick cook oats for 1 1/2 to 2 lbs. of meat.

I do the breadcrumb thing also, but I also put a hard boiled egg in the center. I go easy on the additions to the meat before cooking, and baste it like a turkey with a mixture of butter, soy sauce, and ketchup about 10 minutes before it's done. Don't ask me why the egg. This has been done in my family since before I was born. (And I was born quite a few years ago!)

How about trying oatmeal. I've seen meatloaf recipes that use oatmeal instead of bread crumbs. I'd use "quick oats" that would absorb the liquid more quickly.

Another idea I've used when I discovered I didn't have bread crumbs is cornflakes. Crush them in a ziploc bag then add. They work great as well as crushed crackers butter or saltine or oatmeal.

Why not relabel it "sloppy joes" and serve it with a scoop to your family. They can put it onto hamburger rolls and get all the taste and none of the mess.
