Hors d'eouvres seem superfluous with all the other Thanksgiving fare, but if you feel you must, I'd stick to something very simple like crackers with cheese spread and topped with a slice of pimiento-stuffed olives. Or you could buy some cookie cutters in the shape of turkeys, pilgrim hats, cornucopias, or other Thanksgiving motifs, and cut shapes out of dark and light breads and spread with cheese, liverwurst, or ham salad. Cut-up veggies like celery sticks stuffed with cream cheese, carrot sticks, radish roses, green onions, tomato wedges, pickles and olives makes a colorful snack tray to go along with the canapes, or can stand alone as appetizers, without being too filling.

Think fat and not play the "can not eat that game".
Cheese Ball rolled "heavy" in chopped Pecans. You do it for taste as you make.
1 pound Velveeta cheese
12-16 ounces cream cheese
mix by hand it fun
Add
1 teaspoon garlic powder
1 tablespoon worchestire (Heck, can not say it, much less spell it) sauce
1/2 teaspoon red pepper or chili powder
divide into balls and roll in pecans.
I think this all, if, you divide into 3-4 smaller balls you can do a little experimenting with things you like adding a little at a time.
Try that Dried Beef chopped or some Vadalia (Spelling?) Onion. May want just a very small pinch of sage. You play with this and you be the Cheese Ball Girl come Thanksgiving time. ;-)

Simple. Instead of making something complicated lay out a tray of savory snacks such as olives, pickles, capers, roasted red peppers, sun dried tomatoes, etc. and companion that with a cheese board of about five cheese - two yellow, two white, and a creme brie. Cut up rounds of French bread and rye bread and nestle all of this together. Allow people to make their own hor 'de vours from the selections you've laid out. If you have a Whole Foods in your town (or other specialty store) just hit their deli isle and go crazy. You'll find this is easy (virtually no prep) and very interesting for your guests.

Hummus and chips? Little crackers with garlic cream cheese, and a small shrimp on top? Crudites with a spinach or clam dip? Little smokies? Swedish meatballs? If you get the little ones, people only take 1-2. Deviled eggs? Bruschetta on small slices of baguette? Antipasto?

Buy mini Pitas the kind with a pocket, cut them in half with a pair of scissors, fill some of them with spinach dip and some with crab dip. This always goes over well at my place and it's easy to do.

do a cheese and meat platter, and a fruit bowl. deviled eggs are also good, i make them with dill relish instead of sweet, then garnish with shredded bacon just before serving (so it doesn't get soggy)
