325 to 350 is the proper range for cooking birds. I usually start my oven out at 400 and put the turkey in for 15 to 30 minutes to quick brown the outside - it helps it hold juices better for a moist turkey. Then the heat goes down to 325. Most roasting table ssay 30 to 35 min. a pound. Betty Crocker cook book (which is so old school) still has the best time tables for simple cooking that I've found.

A stuffed 20 lb turkey should cook at 325 for 4 1/2 to 5 hours.
An unstuffed turkey should cook at the same temperature (325) for 3 1/2 to 4 hours.

325 degrees! If your turkey is unstuffed, it should cook for 3 1/2 - 4 hours; if stuffed, 4 1/2 - 5 hours. When the turkey is about two-thirds done, loosely cover the breast and top of drumsticks with a piece of lightweight foil to prevent overcooking the breast. Start checking for doneness at 3 hours.

It's usally around 350 and for 20 pounds I'd cook it for at least 4 or 5 hours. Cover with alum foil for first 4 hrs baste often, then uncover to brown.

try 250* for 3 1/2 to 4 hours or until juices run clear. The internal temp should be 165 when you check it
